Dark chocolate chip banana loaf (recipe)

What are we going to do with all these bananas? – me

Go and look in your fruit bowl. Is it full of ripe and overripe fruit? Yes? Any bananas in there? Good. Then grab a few and make this moist, flavourful banana bread with the added warm tones of dark chocolate chips.

Ingredients

  • 115g melted butter
  • 3 large, ripe bananas
  • 170g light muscovado sugar
  • 2 eggs
  • 200g wholemeal self raising flour
  • 1/2 tsp of baking powder
  • 100g dark chocolate chips

Instructions

  1. In a large bowl, mash the banana with a fork or potato masher
  2. Beat in the melted butter with a wooden spoon
  3. Beat in the sugar, then the eggs
  4. Sift and stir in the flour and baking powder
  5. Stir in the chocolate chips
  6. Pour the mixture into a 18cm x 9cm (7″ x 3.5″) loaf tin lined with a greaseproof paper case
  7. Bake at 175C (160C fan assisted) for 1 hour
  8. When completely cooled, slice like bread and enjoy!

  1. This is a favourite of mine since hubby tends to by the biggest bunch of yellow bananas which start to go brown before we eat them. Perfect with a cuppa :)
