Easy bake triple chocolate cookies

I’m excited to share with you a recipe JD and I came up with during an experimental morning of baking.

These chunky, soft, almost cake-like cookies are rich in butter and cocoa, frosted with a tub of chocolate fudge frosting and topped with a milk chocolate Hershey Kiss, although any chocolate would do. Point is, that’s a lot of chocolate and it is good! Not healthy, obviously, but GOOD!

Here’s what to do.

Ingredients

  • 130g butter or margarine, softened
  • 50ml/60g golden syrup
  • 160g caster sugar
  • A few drops of vanilla extract
  • 1 medium egg
  • 285g plain flour
  • 1 tsp baking powder
  • 3 tsp cocoa powder
  • 1 tub Chocolate Fudge Frosting (we used Betty Crocker)
  • 1 pack (140g) Hershey Milk Chocolate Kisses (or any individual chocolate piece)

Instructions

  1. Preheat the oven to 200C (180C fan assisted)
  2. Put the butter, sugar and syrup in a large bowl and beat until pale and fully combined
  3. Add the eggs and vanilla essence and beat again
  4. Sieve in the flour, baking powder and cocoa and stir until just combined
  5. Chill for 10-15 minutes in the refrigerator to make the dough easier to handle
  6. Line a baking sheet with greaseproof paper, roll the dough into 21 balls approximately 1.5 inches wide and place them on the sheet at least 1.5 inches apart. We did ours in three batches
  7. Bake for just 12 minutes – they should spread into dome shaped cookies with lightly cracked tops
  8. Allow to cool on the sheet for a few minutes while they firm, then transfer to a wire rack to cool completely
  9. Beat the chocolate frosting a little, just to make it loose enough to pipe, then transfer to a piping bag with a star-shaped nozzle
  10. Pipe a swirl of frosting onto the top of each cookies and immediately push a Hershey Kiss gently into the centre
  11. Leave to set for an hour, then transfer to an airtight tub to store – they’ll only keep for a day or two before the cookies over-soften

They’re so easy you could mix this recipe up however you like. For example:

  • Leave out the frosting and push the Kisses on while the cookies are still warm
  • Top with a caramel cup and let it go a bit melty
  • Use homemade cream cheese frosting and top with banana chips
  • Leave out the chocolate in the cookie dough and top with strawberry frosting

The possibilities are endless! Enjoy :)
