Halloween is so much fun. We love it and every year we try to come up with creative new ways to celebrate.
This year, we’ve developed these slime cupcake (chocolate and lemon curd) and brain cupcake (chocolate, strawberry and candied walnuts) recipes.
I also have some very special potion labels (designed by Daddy aka Mark) that you’ll be able to download for yourself and use however you choose. Enjoy!
Start by making the chocolate cupcakes
- 175g slightly salted butter
- 200g caster sugar
- 200g self raising flour
- 3 medium free range eggs
- 125ml whole milk
- 40g cocoa powder
Simply beat all of the ingredients together until pale, then spoon into a 12-hole muffin tray lined with muffin cases and bake at 200C (180C fan) for 25 mins until springy to the touch.
Leave to cool completely, then core the cupcakes so that you have a hole a couple of centimetres deep.
Make your slime cupcakes (chocolate and lemon curd)
For the slime cupcakes, you’ll need
- 6 tbsp lemon curd
- A few drops of blue gel food colouring
Beat the lemon curd with the blue food colouring until you get a nice slimy green, then spoon into the hole and let it overflow a little so that it oozes down the sides of the cake.
The combination of lemon and chocolate is DELICIOUS and they look suitably gross, I think you’ll agree.
Make your brain cupcakes (chocolate, strawberry and candied walnuts)
For the brain cupcakes, you’ll also need:
- 6 walnuts
- 4 tbsp jam
- 2 tbsp pink decorative icing (the type you buy in a tube)
Squeeze a little pink icing on to the top of each walnut on a microwave safe plate.
Brush the icing to cover the nut all over
Zap in the microwave for 30-45 seconds until the icing melts over the nuts. Leave to cool.
Make and core the cupcakes in the way described above, then fill the hole in the cupcake with strawberry jam so that it just overflows. Top with a brain walnut.
Fun, right? The skeleton hand is actually a tea light holder from ASDA, that I picked up for £4. And do you love the potion labels you can see in these shots?
