Cooking is a real passion for me and as regular readers will know, one of the core aims of A Mummy Too is to share yummy, realistic family cooking ideas.
I work to develop recipes that use affordable, easily sourced ingredients that are quick to prepare, so that families can add to their repertoire of nutritious, delicious meals without spending too much precious time in the kitchen.
With all that in mind, I’m really excited to announce my new partnership with Iceland, the experts in frozen food.
The power of frozen
Frozen ingredients are perfect for busy families for a multitude of reasons. The convenience of having the ingredients you need to hand all the time, the ability to just use what you need and avoid waste, the availability of out of season produce all year round.
But there are really valuable nutritional benefits too.
Because fresh fruit and vegetables are often transported long distances, they are picked before they’re ripe to extend their shelf life. Unripe equals less nutritional value, and this value only goes down during transport and storage in-store. In contrast, frozen fruit and vegetables are harvested and frozen when fully ripe, and at the peak of their nutritional value – and it stays this way.
Freezing fruit and vegetables locks in the vitamins; the process of blanching them removes dirt but also halts the natural enzyme actions which cause them to deteriorate. They are then quickly frozen, completing the preservation of their freshly-picked taste and health benefits.
It’s the same principle for frozen meals too. The Iceland range of soups are made and frozen at source, so they remain just that: fresh. Unlike all those fresh soups in the chilled aisle which could have been sitting there for days.
Our freezers have the potential to be the hub of our healthy family eating habits, and I can’t wait to show you how.
What to expect
Over the coming months, I’ll be working with Vicki from Honest Mum to share a host of tips and recipes that harness the power of frozen to make cooking well for your family easier and tastier than ever.
We’ve already been on a shoot together, and had great fun cooking up a storm with some of our favourite products from the range – you’ll be amazed by the choice available!
Soon I’ll be sharing how I’m using the range to create super food shortcuts, kid-friendly seafood secrets and a whole week of smoothie recipes. Meanwhile, Vicki will be sharing her own family favourites, as well as taking you in store so that you can see just what Iceland has to offer.
These are exciting times, and there might be some surprises along the way too, so stay tuned!
