I’m full, which is weird! – me

I am trying SO hard to eat well right now, but it’s pretty easy to stray.

Tonight I had a meal that felt really greedy but was actually pretty much as innocent as you can get. This dish uses an amazing pasta that’s available in health food shops and contains only 7.7 calories per 100g. It’s very chewy, which takes some getting used to, but it’s worth it for the lovely feeling of being full without the guilt.

The ‘pesto’ is super easy to make too and uses savoury yeast for flavour and nutrition, liquid aminos for a truly vegan seasoning, while fresh basil, baby spinach and garlic give that classic pesto flavour.

I’m really pleased with the results. If you’re vegan, coeliac, or on the 5:2 diet, this is a perfect dish for those days when you need something filling.

Here’s what to do (feeds one):

Ingredients

  • 60g baby spinach (14 calories)
  • 1 pack of Slim Pasta spaghetti (16 calories)
  • 1/2 tsp olive oil (20 calories)
  • 8 tsp water (0 calories)
  • 1 rounded tbsp Engevita savoury yeast condiment with B12 (40 calories)
  • 1 small handful fresh basil (2 calories)
  • 1 spray of Liquid Aminos vegan soy sauce alternative (1 calorie)
  • 1/2 clove garlic (1 calorie)

(Calories are estimated)

Instructions

  1. In a large pan over a low heat, put the spinach, basil, oil, and garlic and half the water and cook until totally wilted – add the rest of the water if it goes dry
  2. Tip into a blender, add the liquid aminos and yeast and blitz for a few seconds
  3. Drain and wash the ‘pasta’, then cook over a medium heat for 2-3 minutes
  4. Stir the sauce through and serve

24/52: are you my mum?

Long, long ago in the far mists of time – The Somethingosaur

Oops. I missed Week 24 of my photo a week challenge, Project 52. And I’d been doing so well! Not to be beaten, I’m posting today and will post again tomorrow for week 25, bringing us back up to date.

It’s been a busy couple of weeks – I’ve been on the radio a few times talking about blogging, we’ve moved house and Mark managed to squash his finger in the car door.

But in the quieter moments, we’ve been enjoying this great picture book, The Somethingosaur, which is a take on the classic “are you my mummy?” tale with and a lovely surprise ending. It has a Julia Donaldson feel about it that makes it a joy to read aloud and the illustrations are great.

It’s published by HarperCollins and available in hard back for £10.99

23/52: Derby, Birchover Apartments and the Heights of Abraham

We will come here again soon, won’t we? – JD, 4

It was really tough to choose just one photo to sum up the adventures we had this week in Derby and Matlock, so here are six.

We stayed in an absolutely stunning luxury apartment in Derby, supplied very kindly by Carl at Birchover Hotel Apartments. You may remember I did a giveaway a few months back for a stay at Birchover. Now that I’ve been there, I can honestly say that it is as stunning as it sounds.

We stayed in a two double bedroom penthouse with en suite bathrooms, a gorgeous living room, dining area and fitted kitchen all to ourselves. There was even a private sauna in our apartment. Truly the nicest place I’ve ever stayed.

After our journey up from Lincoln on Monday morning, we took a stroll round Derby city centre and did some shopping. Up early Tuesday morning, we headed into Matlock, just 15 miles from our apartment, where Carl had arranged a family pass for us to enter the Heights of Abraham.

The attraction is right up in the Peaks, and the majority of visitors took the cable cars that zipped up and down the hillside, but I didn’t fancy dangling precariously at 450ft so we opted to walk up. As it wasn’t really pushchair terrain, Mark carried Miss J while I walked ahead with JD.

It isn’t an easy walk – my hamstrings are still protesting – but we reached the midway point feeling exhilarated and took a tour in an old lead mine, made all the more entertaining by JD shouting, “You already know ALL this, don’t you, mummy?” at every fact the tour guide shared. Oops.

Another trek and we were greeted at the top by a cafe, where we enjoyed a very reasonably priced hot meal while we watched woodpeckers and peacocks play just a few feet from us on the other side of the cafe window.

Next, we explored the Fossil Factory, complete with various types of crystal, rock and fossil. JD was most excited to find a cast of the biggest ammonite fossil found in the area, and The educational benefit of the centre was clear with plenty to learn about the natural history of the hillside.

A quick play in the playground and some time photographing the vista and Everyone was feeling tired so we started to queue for the cable car. As we neared the front, I lost my nerve again so we ambled down the hill, hopped in the car and arrived back at our apartment to slob out on well earned takeaway pizza.

All in all, a perfect trip.

Watch me mummy! Are you watching? Mummy! Watch me! – JD, 4

We’ve been having lots of fun recently – lots of games, lots of adventures, lots of time at the park.

It is absolutely wonderful, but all that time not at my laptop has meant that I haven’t written as much or taken as many pictures, and I definitely haven’t been visiting and commenting on other blogs as much.

And then there was the celebration of Little Miss J’s weight gain, and the questions over Little Miss J’s cystic fibrosis test.

So this week has been about contrast: the outdoors and the indoors, the real and the virtual, the good and the bad.

With contrasting elements in mind, I thought I’d try a bit of colour spotting. And given the theme, what better than a pic showing off JD’s excellent choice of odd socks?
