Money-saving minted cheese, potato and pea picnic salad

Can we have tea in the garden? – JD, 4

For our final experiment with the Morrisons M Savers range, we thought we’d try a simple picnic salad idea we found on the M Savers Summer website. It won’t win awards for originality, but it might win awards for frugality, coming in at just 26p per very general portion (£1.04 for four portions) – actually I think it could serve 6 if part of a picnic.

Here’s what we did.

Ingredients

  •  500g of M Savers Potatoes
  •  200g M Savers Frozen Peas
  •  1/2 M Savers Lemon
  •  1 tbsp olive oil
  •  1 tbsp M Savers Mint Sauce
  •  60g M Savers Greek Salad Cheese
  • Salt and pepper

Instructions

  1. With skins still on, cut the potatoes roughly into 1 inch chunks
  2. Add to a pan of cold salted water, and bring to the boil, simmering for 15-20 mins until tender.
  3. Scoop out the potatoes, drain and leave them to cool
  4. Add the peas to the water and cook for 2 minutes so they are warmed through but not softened
  5. Drain and run under cold water
  6. To make the dressing, mix the juice of the lemon with the olive oil and mint sauce with a fork
  7. In a large bowl, mix the cooled potatoes, peas, dressing and crumbled cheese
  8. Store in an airtight container in the fridge for at least an hour to let the flavours sink in

It’s a good, cheap recipe but I have to confess not delicious like the lemon drizzle cake or apricot crunch bites we made last week. I think it’s because I’m a cheese snob, so in future I’d probably blow a few more pennies and switch the salad cheese for real feta. Reckon you might give it a try?

Shortcut-lover’s lemon drizzle cake


It’s really lemony! – JD, 4

As part of my challenge to cook yummy, frugal food with the Morrison’s M Saver’s range, I tried out their “cheat’s lemon drizzle loaf”, which takes moments to prefer, tastes yummy and feeds 10 for just 90p!

Ingredients

  • 2 packets of M Savers Sponge Mix
  • 2 free-range eggs
  • 150ml Water
  • 4 tbsp of M Savers Lemon Curd
  • 1 M Savers Lemon
  • Some icing sugar

Method

  1. Preheat the oven to 200C (175C fan oven)
  2. Line a one litre loaf tin with grease proof paper.
  3. Whisk the eggs and water together in a large bowl
  4. Add the cake mix and beat with an electric whisk for 3 minutes until light and frothy
  5. Add two tablespoons of lemon curd and whisk a little more until mixed
  6. Pour the cake mix into the tin and bake for 35 to 40 minutes
  7. Remove from the oven and stab all over with a skewer to about 2 inches deep
  8. Mix together the juice and zest of the lemon with 2 tbsp lemon curd
  9. Spoon slowly over the cake while it’s still in the tin
  10. When completely cool, lift out the tin and peel off the paper
  11. Sprinkle liberally with icing sugar to taste – we prefer it sweet!

This recipe is surprisingly tasty. We prefer to make our own batter from scratch but this is a great alternative if you’re short on time and pennies.

Frugal chocolate apricot crunch

Can I have three for dessert? – JD, 4

I’ve just started working with Morrisons, trying out summer recipes that cost as little as possible using their M Savers range.

This weekend we made these little fruity cornflake cakes that cost just 5p per bite (81p for 16 bites) and are great for taking on a picnic.

Ingredients

  • 100g M Savers Milk Chocolate
  • 1 tbsp semi skimmed milk
  • 50g M Savers Cornflakes
  • 70g M Savers Dried Apricots

Instructions

  1. Melt the chocolate
  2. Warm the milk to room temperature and beat into the chocolate
  3. Snip the apricots up roughly and stir into the chocolate
  4. Stir in the cornflakes
  5. Spoon 16 equally size clumps onto a greaseproof tray
  6. Leave somewhere cool to harden for an hour
  7. Store in an airtight container

Easy, yummy, fun!
