I love spending relaxed weekends creating new dishes, pulling forgotten spices from the cupboards, dusting off old recipe notes and whiling away the hours experimenting. But some days, it’s simply not the time for spending hours in the kitchen, and that’s where shortcuts make a welcome entrance.
If you’re having friends round for a relaxed dinner, you can cheat your way to a fabulous home-cooked Asian-inspired meal with a little help from Amoy’s latest range of ‘Taste of Asia’ sauces, which is exactly what I did.
Above is a pork curry made with Amoy Thai Massaman Curry Cooking Sauce. I fried pork strips in hot oil with onion and garlic, then added sliced green peppers, mange tout, baby sweetcorn, water chestnuts and bamboo shoots. When the veggies were cooked but still bearing a little crunch, I added the sauce, turned down the heat and cooked for five minutes until it was ready to serve.
I also made up this Thai green curry using new Amoy Thai Green Curry Cooking Sauce. It’s simply chicken strips stir fried with cashews, mange tout, baby corn, bamboo shoots and water chestnuts, then in goes the sauce to heat for five minutes.
As a side, I made some simple griddled chicken skewers and served them with new Amoy Peanut Satay Sauce, which is ready in the microwave after just 40 seconds.
Finally, I served up some spring rolls, plenty of rice topped with chilli and chopped peanuts, and some Amoy Singapore Curry Noodles, prepped on the hob in minutes and served top with spring onions and a dash of chilli powder.
The plates were emptied in minutes, everyone had full bellies and I could enjoy the meal with everyone instead of being exhausted from hours in the kitchen. A win all round, I’d say.
