I’m going to have a bit more – me, eating leftovers out of the fridge
With my mum visiting recently, Mark and I grabbed the chance to have a rare night out. I didn’t want to leave my mum having to cook, so I whipped up a quick meal before we left that the whole family enjoyed.
Based on a Marks & Spencer recipe, it’s simply two griddled aubergines layered up with shredded mozzarella and tomato sauce, topped with parmesan and white bread crumbs.
However, to make our aubergine’s stretch further as a main meal, I used 2 tins of tinned tomatoes, reduced a little with a sprinkling of dried mixed herbs as well as some lightly fried, diced courgette and onion. I also switched from a couple of tbsp of breadcrumbs and grated hard cheese to a couple of big handfuls to give a really generous crumble top.
The aubergine is super soft and melt in the mouth and marries perfectly with the zing of the tomatoes, smooth creaminess of the mozzarella and delicious crunch of the crumble topping.
