Above is Goan Tomato and Lentil, a delightfully thick tomato & lentil soup warmed by cumin, chilli and paprika and balanced with low-fat yoghurt. I served it with a few nuts and chilli flakes sprinkled on top and it made for a filling, vegetarian, delicious meal.
My other favourites from the range include:
- Fragrant Thai Carrot. A vegan soup, flavoured with a delicate combination of lemongrass, ginger, lime and coriander that perfectly compliments the sweetness of the carrot, while a little coconut adds creaminess. Really, really good.
- Bangalore Lentil Dahl. A richly satisfying, vibrant toor daal and chickpea soup, flavoured with tasty garam masala, curry leaves and sweet mango chutney. I’ll could eat this vegan soup all the time.
- Mexican Tomato and Fire Roasted Pepper. Another vegan option, this soup is as bright and fresh tasting as you’d hope, with punchy tomatoes and fire roasted peppers, blended with a pinch of crushed nachos and a squeeze of tangy lime.
All the GLORIOUS! Soups take minutes to heat in the microwave but taste so fresh, it’s almost as if you made them at home. I really am a big fan.
