This was my lunch today. Lately, I have been at my desk too long, eating too much pasta (as always) and not getting enough rest so I wanted a low carb, filling, vitamin, calcium and iron rich boost. This was just the ticket. It tastes sweet and fruity - you can't really taste the kale.
Here's what you need to make 1 huge glass, or two medium glasses (as pictured) of this lunchtime energy smoothie.
Ingredients
- 1 banana
- 1 green apple (cored)
- 1 handful of raw curly kale
- 1 handful of ice
- 3 tablespoons of unsweetened soya milk
- 3 raspberries
Instructions
- Put everything except the raspberries in your blender and whizz until smooth.
- Pour into the glass and top with the raspberries for an extra bit of texture and deliciousness.
Note: I use ice in my smoothies because it makes them deliciously cool, so to make this you'll need a blender powerful enough to cope with chopping everything up.
I use my Froothie Optimum 9400 (affiliate link), a super powerful blender that makes short work of all of the ingredients in seconds.
If you like kale, you can use the same ingredients but start upping the kale content - the more you add, the more savoury it tastes, but it's still really lovely and satisfying.

That smoothie looks delicious. I can never eat kale, but in smoothies, it's not bad at all.

Sorry it has taken me so long to stop by - apologies! We love kale smoothies and have different versions, some masking the kale and some not minding if it's there as a back note. This looks a lovely sweet, child-friendly way to enjoy kale. Thanks for linking to my own green smoothie. All best, Kellie
Emily Leary says
Thanks and yes, I agree, I don't mind if you can taste the kale.

i've been looking for a way to use kale - I juiced a load of it and froze it as it tasted gross on its own. This looks like the perfect recipe to try. x
Emily Leary says
Yep the apple and banana really masks the taste. You can whizz red berries in the mix too and it's delicious but BE WARNED if you add red, you get a sludgy shade of brown. LOL!
thebeesleybuzz says
Don't worry - I'm not put off by the colour - I used to juice carrots and parsley together and that looked gross but tasted fine, so might try making the brown sludge. x

Yum I love a healthy smoothie! A good idea to have on a busy hot day too!
Emily Leary says
Totally! I can't get over how much I am loving them. I fear I'm going to become a smoothie bore.
Amanda says
I've been doing this too, I must share a couple of my recipes. I've even done them for dinner, for the girls, as they have cooked meal at school. I packed it full of different fruits and ice when it was a really hot day, so filling, but refreshing too!
Emily Leary says
Ohh yes please do blog the recipes. This is my new obsession!
Becca @ Amuse Your Bouche says
This looks beautiful! Gorgeous photo. I've only just started making smoothies regularly but haven't tried putting veg in them yet! Thanks for the inspiration :)

Thank you :)
Jacqueline Meldrum says
That looks wonderful Emily. I haven't tried kale in smoothies yet, but I do use spinach quite often. Must try the kale. I love those wee raspberries just peeking over the top.
Emily Leary says
I really like kale although I have switched to spinach today as I think it's possible to have too much of a good thing! ;)
Dannii @ Hungry Healthy Happy says

Thanks for linking to my kale crisps too.

I'm swapping out lunch for a smoothie at the moment and it feels great. Will start introducing some nuts into the mix next week, I think.
Helen @ Fuss Free Flavours says
Yum! I adore a massive green smoothie. It is astonishing that you really cannot taste the kale at all.
Emily Leary says
I am thoroughly addicted.
