This is beyond the normal toastie – me, getting overexcited
To celebrate the launch of the new Leerdammer Toastie range – vegetarian cheese slices with a creamier recipe ideal for melting and a square shape which fits neatly into sandwiches – we were invited to take part in a ‘toastie challenge’.
Armed with an array of ingredients, we settled on this spicy, smokey vegetarian toasty.
To make it, we buttered the outside of two slices of bread and filled with two slices of Leerdammer and a generous spoonful of Pink’s Smoked Sweet Pepper Pesto, which is delicious vegetarian coarse pesto, made with smoked sweet peppers, tomatoes, butter beans, rapeseed oil, cashew nuts, vegetarian parmesan cheese, basil and garlic puree.
We toasted our creation, then served it with a generous dollop of Mauritius Foods’ Dodo Chilli Dipping Sauce. This part is not to be skipped as the sauce is made from 34% red chillis and has the perfect balance of hot and sweet without the vinegary aftertaste.
After all that, the resulting toastie is one of the sweetest, smokiest, spiciest, most indulgent toasties you’ll ever have. Trust me, you need to try it!
Leerdammer Toastie is now available nationwide in Tesco, Morrisons, Sainsbury’s, Waitrose and Asda priced at a RRP of £1.75 for a pack of six slices. It really is incredibly creamy – so much so that it becomes richly molten inside a toastie – bliss.

The Lemon & Chive variety is stunning when stirred onto new potatoes, and the Commonwealthy Chutney is a stunning accompaniment to a curry.
Dodo Chilli Dipping Sauce is suitable for vegans and can be purchased from the Mauritius Food’s store, priced at £2.49 for 180g. It’s so delicious, I adore it with spring rolls. It also tastes great spread on sandwiches, stirred into sauces, or on top of a baked spud. A really versatile sauce to have in the cupboard.
