This lentil and pomegranate salad is a healthy and delicious dish that is perfect for any occasion and can be made entirely with store bought ingredients with virtually no prep.
Add the beetroot, pomegranate seeds and shredded mint, followed by the the olive oil, pomegranate molasses, lemon juice and a good pinch of salt and pepper. Mix together.
Spoon the salad into bowls, top with crumbled goats cheese and enjoy.
