Healthier than your average muffin and just as tasty, these already wonderful bran muffins are made extra delicious with a hint of granola.

Ingredients

  • 125 g plain flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 130 g light soft brown sugar
  • 60 g granola
  • 300 g oat bran
  • 300 ml buttermilk
  • 80 g applesauce
  • 1 egg medium free range
  • 1/2 tsp vanilla extract

Instructions

  • Preheat the oven to 200C/390F (180C/355F fan). 
  • Put all of the ingredients into a large mixing bowl.
  • Stir until fully combined.
  • Line a muffin tray with paper cases and spoon the mixture into them evenly, levelling off the tops.
  • Bake for 20 minutes until risen and golden.
