Baked Bramley apples

Baked Bramley apples filled with fresh yoghurt and topped with homemade poppy seed granola.

  • 4 Bramley apples
  • 8 tbsp greek yoghurtFor the granola:
  • 100 g rolled oats
  • 1 tbsp coconut oil warmed to a liquid
  • 1 tbsp sunflower seeds
  • 2 tbsp maple syrup or honey
  • 1 tbsp desiccated coconut


  • Preheat the oven to 200C/400F/180C fan and mix all of the granola ingredients well on a not stick tray.
  • Bake for 12 minutes, stirring half way through to ensure the oats are evenly browned. Set aside to cool.
  • Core the Bramleys and place on a non-stick tray.
  • Bake for 15 minutes until softened but still firm enough to hold their shape. Allow to cool until just warm rather than hot.
  • Place one apple on each plate, fill with yoghurt so that it drips over the sides, then sprinkle generously with granola. Add extra syrup and fruit, if desired.
