Baked Bramley apples
Baked Bramley apples filled with fresh yoghurt and topped with homemade poppy seed granola.

- 4 Bramley apples
- 8 tbsp greek yoghurtFor the granola:
- 100 g rolled oats
- 1 tbsp coconut oil warmed to a liquid
- 1 tbsp sunflower seeds
- 2 tbsp maple syrup or honey
- 1 tbsp desiccated coconut
Preheat the oven to 200C/400F/180C fan and mix all of the granola ingredients well on a not stick tray.
Bake for 12 minutes, stirring half way through to ensure the oats are evenly browned. Set aside to cool.
Core the Bramleys and place on a non-stick tray.
Bake for 15 minutes until softened but still firm enough to hold their shape. Allow to cool until just warm rather than hot.
Place one apple on each plate, fill with yoghurt so that it drips over the sides, then sprinkle generously with granola. Add extra syrup and fruit, if desired.
