French Cinnamon Toast Recipe
This gorgeously spiced French cinnamon toast recipe is served with warm cinnamon apples, lemon mascarpone and honey.

Ingredients
For the lemon mascarpone

g
mascarpone

unwaxed lemons
zest and juice

For the toast

medium thickness
For the apples
2
green apples
cored and cut into thin slices

Instructions
For the lemon mascarpone
Put the mascarpone, lemon zest, and honey in a bowl, stir gently to combine.
Pop in the fridge.
For the French toast
Preheat the oven to 160C/320F (140C/285F fan). In a bowl, combine the eggs, cinnamon, mixed spice and honey.
Dip each piece into the egg mixture, shake off the excess – you should have just enough batter for all four slices.
Warm the pan over a medium heat. Griddle for 30 seconds and flip, fry for 30 more seconds. Cut into triangles.
Pop on a plate or baking tray and into the oven to keep warm.
For the griddled apple slices
Pop the apple slices into a bowl, add the cinnamon and honey and toss until well coated.
Lay the slices onto the grill pan, fry for 60 seconds, then flip and cook for a further 30 seconds until just cooked.
To plate up
Serve two triangles of French toast to each plate.
Top each with apple slices and a generous dollop of the lemon mascarpone.
Scatter with walnuts and serve.
