Oozing slime Halloween cupcakes

Ingredients

For the cupcakes:

  • 175 g slightly salted butter
  • 200 g caster sugar
  • 200 g self raising flour
  • 3 medium free range eggs
  • 125 ml whole milk
  • 40 g cocoa powder

For the slime:

  • 6 tbsp lemon curd
  • A few drops of blue gel food colouring

Instructions

To make the cupcakes:

  • Simply beat all of the ingredients together until pale, then spoon into a 12-hole muffin tray lined with muffin cases and bake at 200C (400F/180C fan) for 25 mins until springy to the touch.
  • Leave to cool completely, then core the cupcakes so that you have a hole a couple of centimetres deep.

To decorate:

  • Beat the lemon curd with the blue food colouring until you get a nice slimy green, then spoon into the hole and let it overflow a little so that it oozes down the sides of the cake.
