Gory brain Halloween cupcakes

These spooky, gory brain cupcakes are a winner for Halloween!

Ingredients

For the cupcakes:

  • 175 g slightly salted butter
  • 200 g caster sugar
  • 200 g self raising flour
  • 3 medium free range eggs
  • 125 ml whole milk
  • 40 g cocoa powder

For the decorations:

  • 6 walnuts
  • 4 tbsp jam
  • 2 tbsp pink decorative icing the type you buy in a tube

Instructions

To make the cupcakes:

  • Simply beat all of the ingredients together until pale, then spoon into a 12-hole muffin tray lined with muffin cases and bake at 200C (400F/180C fan) for 25 mins until springy to the touch.
  • Leave to cool completely, then core the cupcakes so that you have a hole a couple of centimetres deep.

To decorate:

  • Squeeze a little pink icing on to the top of each walnut on a microwave safe plate.
  • Brush the icing to cover the nut all over
  • Zap in the microwave for 30-45 seconds until the icing melts over the nuts. Leave to cool.
  • Fill the hole in the cupcake with strawberry jam so that it just overflows. Top with a brain walnut.
