Mushroom chow mein

This dish uses udon noodles for a slight twist on the typical mushrooms chow mien, while fresh green peppers add a little crunch.

  • 1 tbsp groundnut oil
  • 400 g closed-cup mushrooms cut into quarters
  • 120 g stir fry sauce
  • 300 g udon noodles
  • 1/2 green pepper deseeded and thinly sliced


  • Heat the oil in a non-stick pan over a high heat.
  • Add the mushroom and fry for about 5 minutes until soft and darkened, then add the sauce and noodles.
  • Fry for a further 3 minutes, stirring regularly.
  • Transfer to a dish to serve and top with slices of the green pepper
