Mushroom chow mein
This dish uses udon noodles for a slight twist on the typical mushrooms chow mien, while fresh green peppers add a little crunch.

- 1 tbsp groundnut oil
- 400 g closed-cup mushrooms cut into quarters
- 120 g stir fry sauce
- 300 g udon noodles
- 1/2 green pepper deseeded and thinly sliced
Heat the oil in a non-stick pan over a high heat.
Add the mushroom and fry for about 5 minutes until soft and darkened, then add the sauce and noodles.
Fry for a further 3 minutes, stirring regularly.
Transfer to a dish to serve and top with slices of the green pepper
