Banana and chocolate chip brioche pudding (recipe)

So here’s a take on the traditional bread and butter pudding that won’t help keep you trim, but will make you smile.

Equipment

Ingredients

  • 500 ml milk
  • 1/2 tbsp vanilla extract
  • 5 free-range egg yolks
  • 85 g golden granulated sugar
  • 1-2 tsp cornflour if needed
  • 50 g chocolate chips
  • 1 tbsp butter softened
  • 6 slices chocolate chip brioche
  • 2 medium bananas sliced

Instructions

  • Pre-heat the oven to 200C (180C fan).
  • In a saucepan, bring the milk and vanilla extract to the boil and take off the heat.
  • In a large, heat resistant bowl, whisk together the egg yolks and sugar together until they thicken and turn pale.
  • Pour the milk over the egg mix, whisking as you go, then pour the lot back into the saucepan.
  • Stir over on a medium heat until coats the back of a spoon and leaves a trail if you run your finger through it – don’t let it boil.
  • If it’s not thickening, mix the cornflour with a little milk until smooth and then whisk into the custard while heating.
  • Butter the brioche and use the remaining butter to grease the loaf tin.
  • Put three pieces of brioche in the bottom of the loaf tin.
  • Cover with the sliced bananas.
  • Sprinkle over half the chocolate chips.
  • Cover with the remaining brioche.
  • Pour the custard into the tin, leaving a couple of edges peeping through (save the spare custard).
  • Sprinkle over the remaining chocolate chips.
  • Bake for around 30 minutes, depending on whether you like it gooey or firm – test by putting a knife in the centre.

Notes

Serve on its own, with the remaining custard, or with ice cold ice cream.
