Ingredients

pasta

avocado
ripe, skin and stone removed

g
frozen peas

handful
spinach leaves
1
handful
fresh coriander (cilantro)

handful
fresh parsley

tbsp
vegetarian hard cheese or mature cheddar

ml
whole milk

salt and black pepper

Instructions
Cook the pasta in a large pan of boiling water according to the packet instructions, then drain and return to the pot.
While the pasta is cooking, whizz up the avocado, peas, spinach, herbs, cheese and milk and blender or food processor.
Season with a pinch of salt and pepper.
Pour the sauce over your cooked pasta, stir in and warm a little over a low heat.
Serve in bowls, topped with a sprinkle of cheese. Enjoy!
