Flat Bread Pizza Recipe
These flatbread pizzas are as simple as they look to make, could be easily tweaked with different toppings, take minutes to cook and, most importantly, taste flipping lovely with a super thin base that's crispy at the edges.

thin flatbreads
I used gyro-style flatbreads

pasta sauce

fresh mozzarella

red bell pepper
thinly sliced

olive oil
salt and black pepper

fresh rocket (arugula)

Instructions
Preheat the oven to 220C (200C fan, 425F).
Place the flatbreads on two baking sheets.
Spread with the pasta sauce, going almost to the edges.
Tear pieces of mozzarella and dot on top of the pizzas.
Add the sliced peppers.
Season with salt and pepper and drizzle with a little olive oil.
Bake for 5 minutes.
Transfer the pizzas to boards and scatter with fresh rocket.
Cut into slices and serve.

Notes
Try any other toppings you fancy. How about fresh black olives or pepperoni? Be sure to cut any toppings thinly so that they cook quickly in the oven.
