Set up a crumbing station with three bowls – flour in the first, beaten egg in the second, and breadcrumbs in the third.
Add the garlic granules, paprika and a big pinch of salt and pepper to the flour.
Dip a courgette chip into the flour, coating all over. Now dip in the egg, then back in the flour, then the egg again. Finally, dip in the breadcrumbs.
Repeat with the rest of the courgette chips, placing on the lined baking sheet as you go.
Spray the chips generously with oil.
Bake for 15 minutes, then turn over and bake for a further 15 minutes.
