Go and look in your fruit bowl. Is it full of ripe and overripe fruit? Yes? Any bananas in there? Good. Then grab a few and make this moist, flavourful dark chocolate chip banana bread.
Put three of the bananas into a large bowl and mash with a fork.
Add the margarine and sugar and beat until creamy.
Add the eggs and beat again.
Fold in the flour and baking powder.
Add the chocolate chips, stirring gently until the chips are evenly distributed.
Line a loaf tin with baking paper. Pour in the mixture and gently level off.
Slice the remaining banana in half lengthways and place on top of the batter.
Bake for 1 hour until golden brown on top and fully cooked through. You can check this by pushing a skewer into the centre of the loaf. If it comes out clean, the cake is ready.
When completely cooled, slice your chocolate chip banana loaf like bread and enjoy!

If you prefer, milk chocolate or even white chocolate chips work well in this recipe too. Or you could try some chopped walnuts.
