White Chocolate Chip Oatmeal Cookies Recipe
These white chocolate chip oatmeal cookies are almost like flapjacks and cookies had a baby. They're light, chewy, a little crisp at the edges, and they smell amazing when they come out of the oven.

softened

white caster sugar (superfine sugar)

vanilla extract

Instructions
Preheat the oven to 180C (160C fan).
Put the softened butter in a bowl, then whisk in the sugar until the mixture is pale and fluffy.
Add the milk, eggs and vanilla extract and whisk again.
Mix in the flour and oats.
Add the chocolate chips and stir through.
Scoop tablespoons of the mixture onto a baking sheet lined with baking paper, spacing at least 5cm (2 inches) apart.
Bake for 10-15 minutes, until just golden.
Cool briefly on the baking sheet, then transfer to a cooling rack.

These oatmeal cookies are super adaptable. Try other tasty additions such as dried fruit, nuts and seeds.
