This creamy coleslaw is made without mayo! Instead, the carrot, cabbage, onion and apple is tossed in low fat crème fraîche, flavoured with mustard and fennel seeds. Crunchy, fresh, delicious, low fat and low calorie.
Put the red cabbage, white cabbage, carrot, onion and apple in a mixing bowl.
Add the crème fraiche, mustard and fennel seeds and mix well.
Add the lemon juice and mix well.
Season to taste with salt and pepper.

Notes
When properly stored in the fridge this coleslaw should last 3 days. If you forget to refrigerate for more than a couple of hours it's best to throw it away.
