Orange Soda Bread Recipe
This orange soda bread recipe takes an Irish classic and gives it a fresh citrus twist with orange juice, zest and bursts of golden sultanas.

plain white flour (all purpose flour)
plus more to flour your hands

caster sugar

bicarbonate of soda (baking soda)

large orange
finely zested and juiced

golden sultanas

thick set yogurt

Instructions
Preheat the oven to 200C (180C fan).
Put the sultanas in a bowl and cover them with boiling water. Leave to soak for 5 minutes, then drain and set aside.
Put the flour, sugar, cinnamon, salt and bicarbonate of soda in a mixing bowl. Whisk together so that everything is evenly distributed.
Make a well in the centre and add the yoghurt, orange zest and 2 tbsp orange juice. Mix until it starts to clump.
Add the sultanas and fold through.
Flour your hands and bring the dough together into a ball. You don't need to knead or compress the dough, just lightly gather it together.
Gently transfer your dough to a flour-dusted, nonstick baking sheet.
Press a cross in the top with the handle of your wooden spoon to help the dough rise.
Bake in the oven for 40 minutes.
Cool on a wire rack.
