    This orange soda bread recipe takes an Irish classic and gives it a fresh citrus twist with orange juice, zest and bursts of golden sultanas.

    With it's fresh flavours and hint of sweetness, this orange soda bread is the perfect breakfast landing pad for butter, marmalade or even chocolate spread!

    Irish soda bread is a classic for a reason - it's simple, easy to make, and delicious! Soda bread uses the reaction between alkaline bicarbonate of soda (baking powder) and acidic dairy to produce carbon dioxide bubbles in the bread.

    The reaction is so quick and effective that soda bread doesn't need to be kneaded or proved - it's just a case of mix and go.

    It's also wonderfully versatile, working with all sorts of additions, from chocolate to to bacon and cheese. You can even make vegan soda bread!

    This orange soda bread recipe is just as easy to make as regular soda bread.=, but really pays off in the flavour department.

    To make your orange soda bread, you'll first need to soak your sultanas so they become plump and juicy.

    While the sultanas soak, you'll need to mix together the flour, sugar, cinnamon, orange zest, salt, bicarbonate of soda.

    Once everything is evenly mixed, you'll make a well in the centre of the dry ingredients and pour in the yoghurt and lemon juice.

    Next, you'll mix roughly then stir in the sultanas and gather the dough in a rough ball.

    Finally, you'll transfer it to a nonstick baking sheet, score a cross on top and bake in the oven for 40 minutes until golden and beautifully aromatic.

    Ingredients

    • 500 g (1.1 lb) plain white flour (all purpose flour) plus more to flour your hands
    • 50 g (1.8 oz)  caster sugar
    • 1/2 tsp (0.5 tsp)  cinnamon
    • 1 tsp bicarbonate of soda (baking soda)
    • 1 tsp salt
    • 1 large orange finely zested and juiced
    • 100 g (3.5 oz) golden sultanas
    • 450 g (15.9 oz) thick set yogurt

    Equipment

    • Weighing scales
    • Measuring spoons
    • Measuring jug
    • Large mixing bowl
    • Citrus juicer
    • Wooden spoon
    • Grater
    • Nonstick baking sheet

    Instructions

    Preheat the oven to 200C (180C fan).

    Put the sultanas in a bowl and cover them with boiling water. Leave to soak for 5 minutes, then drain and set aside.

    Put the flour, sugar, cinnamon, salt and bicarbonate of soda in a mixing bowl.

    Whisk together so that everything is evenly distributed.

    Make a well in the centre and add the yoghurt, orange zest and 2 tbsp orange juice.

    Mix until it starts to clump.

    Add the sultanas.

    Fold through.

    Flour your hands and bring the dough together into a ball. You don't need to knead or compress the dough, just lightly gather it together.

    Gently transfer your dough to a flour-dusted, nonstick baking sheet.

    Press a cross in the top with the handle of your wooden spoon to help the dough rise.

    Bake in the oven for 40 minutes.

    Cool on a wire rack, then slice or tear and enjoy!
