Preheat the oven to 200C (180C fan, 400F). Place the chopped apple in a small pan with the cranberries and mixed spice, and approx 100ml (3.4 fl oz) of water.
Place over a medium heat and cook down gently while stirring until you have a thick, red applesauce. Note: some apples break down more easily than others, so if you need to, you can add more water, or blitz the sauce down with a hand blender.
Unroll your puff pastry and cut in half.
Place one of your pastry halves on a board lined with baking paper.
Spread the cooled applesauce all over the pastry, right to the edges.
Press the other pastry half on top.
Cut your Christmas tree shape.
Slice 1cm/0.5 inch strips either side, leaving a couple of centimetres of 'trunk' clear up the middle of the tree.
Twist each strip in the same direction all the way up both sides of the tree.
Brush all over with milk.
Sprinkle all over with the cinnamon.
Transfer on to a baking sheet. Adding a diamond and a couple of thin triangles, made from your offcuts.
Bake for 20-25 minutes until gently golden.
Once cooked and cooled, position the star in place and decorate with your choice of toddler-friendly goodies.

Notes
Be sure to add the candies after the tree has baked and not before, otherwise they will most likely melt.
