    Biscoff Rice Krispie Treats

    These Biscoff rice krispie treats are super easy to make and have plenty of Biscoff flavour, plus the perfect crunchy, chewy texture.

    To make these beautiful little squares, you'll need just six ingredients: butter, marshmallows, Lotus Biscoff spread, rice krispies, white chocolate and some Lotus biscoff caramelised biscuits

    They're made by melting marshmallows with butter and Biscoff spread / butter, and then stirring in the rice krispies.

    To finish, you'll top with melted white chocolate and finish with a crumble of Biscoff biscuits (or cookies, if you're reading in the US).

    This recipe makes 16 squares, so it's the perfect dessert to make for lunch boxes, bake sales, road trips, cinema trips, picnics, or just to store in your biscuit tin for little treats to share and enjoy throughout the week.

    This is a no bake oven, so it's ready in a flash. You'll just need a microwave to melt your ingredients together, or if you don't have one, a double boiler works just as well.

    Ingredients

    Makes 16 squares.

    • 50 g salted butter
    • 350 g marshmallows
    • 200 g Lotus Biscoff spread
    • 200 g rice krispies
    • 400 g white chocolate
    • 10 Lotus biscoff caramelised biscuits

    Equipment

    • Weighing scales or measuring cups
    • Large mixing bowl
    • Silicone spatula
    • Deep 20cm square tin (8")
    • Parchment/baking paper
    • Kitchen knife

    Step-By-Step Instructions

    Line your tin with baking paper.

    Put the butter, Biscoff and marshmallows in a large bowl.

    Melt in 30 second blasts in the microwave, stirring between each burst until fully melted.

    Add the rice krispies.

    Stir until well combined.

    Tip into the lined tray.

    Pack down well (if your hands keep sticking, try rubbing some butter on them).

    Melt the white chocolate gently in the microwave in 30 second bursts, stirring between each burst. Pour on top of the rice krispies.

    Gently spread the chocolate to the edges.

    Top with the Biscoff Cookies, leaving some whole and breaking others into pieces, or crushing into crumbs.

    Place in the fridge for 30 minutes to set, then slice.
