Mini Egg rocky road is that classic combination of chocolate, marshmallows and biscuit, made perfect for Easter with a generous helping of Mini Eggs.
Rocky road is really just fridge cake by another name, and ingredient do vary, although I think the marshmallows are essential. Luckily for any vegetarians in your family, it's now really easy to get vegan marshmallows from most supermarkets, so they needn't miss out!
To make your Mini Egg rocky road, you'll melt milk chocolate with butter and golden syrup, allow it to cool, then stir in all your additions: digestive biscuits, white chocolate chips, marshmallows and, of course, Mini Eggs.
You'll then pile the deliciously chocolatey mixture into a lined tin, top with extra Mini Eggs and chill until set before cutting into squares.
This Mini Egg rocky road look absolutely amazing when sliced. Just look at those gorgeous patterns and cross sections of yummy chocolate, biscuit and marshmallows. Such a pretty Easter treat!
Here's how to make my Easter rocky road.
Ingredients
- 400 g milk chocolate
- 100 g slightly salted butter
- 100 g golden syrup
- 100 g white chocolate chips
- 70 g digestive biscuits (graham crackers) broken into chunky pieces
- 50 g small marshmallows vegetarian, if required
- 300 g Mini Eggs 2/3 in the mix, 1/3 on top
Equipment
- Square 18cm (7") nonstick cake tin
Instructions
Put the milk chocolate, butter and golden syrup in a large heatproof bowl.
Melt gently in the microwave (in 30 seconds blasts) or over a bain-marie and stir until melted and smooth.
Allow to cool a little - if the chocolate is hot, it'll melt the additions.
Add the white chocolate chips, digestives, marshmallows and two thirds (200g / 7oz) of the Mini Eggs.
Stir well until everything is evenly coated.
Tip the mixture into the tray lined with baking paper.
Press to level off.
Top with the remaining (100g / 3.5 oz) Mini Eggs.
Place in the fridge overnight to set. Once set, cut into 16 squares and enjoy.

You don't need any special equipment to make Mini Egg rocky road. There's no cooking involved, just the melting of some chocolate. So, you don't need to be precious about the tray or container you use to set your rocky road mix.
So, you should be able to find everything you need in the average kitchen.
You'll just need weighing scales and measuring spoons, a mixing bowl and spoon, a baking tray and parchment, and a kitchen knife and chopping board.
As long as you give your rocky road time to set correctly, the container won't make a difference. For some extra Easter specialness, you could even use egg-shaped plastic moulds to make egg-shaped rocky roads! Though I love the classic look of tray sliced rocky road.
What are Mini Eggs?
Mini Eggs are small egg-shaped chocolates with a thin candy shell. If you've never tried Mini Eggs, then you need to change this immediately!
They're so creamy and melt in the mouth, and there's nothing better than the feeling of the candy shell cracking against your tongue.
Over the years, Cadbury has released new versions of Mini Eggs, including Shimmering Eggs (metallic shells), Dark Mini Eggs (dark chocolate), Popping Mini Eggs (popping candy eggs), and White Mini Eggs (white Mini Eggs with white chocolate inside). They even released an even smaller (or more mini) version called 'Micro Mini Eggs'!
So feel free to use any of these variations if you prefer! They'll all be just as delicious!
Where can I buy chocolate Mini Eggs?
Most supermarkets stock Cadbury Mini Eggs, which is the brand I used in the pictures shown.
However, there are so many kinds of small chocolate eggs, so feel free to use another brand if you can't find any in your local store or online.
You'll usually find Mini Eggs in your supermarket's chocolate/candy section from January to Easter. Or you can buy various versions of Mini Eggs online pretty much all year round. For example, there are plenty of generic label mini eggs available on Amazon.
Can I use different chocolate eggs for this recipe?
Yes, you can use any kind of chocolate eggs to make Mini Egg rocky road! There's no cooking in this recipe, so as long as you use the same quantity of chocolate eggs, your Mini Egg rocky road will turn out beautifully.
Creme Eggs and Mini Eggs are the original mini chocolate eggs, though Creme Eggs came first. Over the years, other brands have launched their own egg versions of their chocolate to capitalise on the popularity of Mini Eggs. So you can get Oreo mini eggs, M&M Eggs, Daim Mini Eggs, Milkybar Eggs, Galaxy Golden Eggs and Caramilk Eggs.
I think the Galaxy Golden eggs or Cadbury's Shimmering Mini Eggs could work really well and give you an amazing looking glittery rocky road!
I'm vegetarian, where can I buy suitable marshmallows?
If you aren't vegetarian, you might be surprised to learn that marshmallows contain gelatine (from beef or pork). So if you're making this Mini Egg rocky road for a vegetarian friend, make sure you use vegetarian Marshmallows.
It's so frustrating that brands still use gelatine to make marshmallows when there are accessible alternatives available. Luckily, there are vegetarian marshmallows available, though not in every supermarket.
My favourite brand of gelatine-free marshmallows is Freedom Mallows. You can buy them in some supermarkets like Ocado in the UK, or you can find them in health food stores like Holland and Barrett or online.
Do I need to include the golden syrup?
Yes, the golden syrup is essential to help hold the Mini Egg rocky road together and (along with the butter) to give the chocolate the right consistency.
If you don't have any golden syrup, you could use light agave syrup, light corn syrup or glucose syrup.
I wouldn't recommend using honey as it would affect the flavour of your rocky road and tends to be a little looser than syrup.
Is Mini Egg rocky road suitable for vegetarians?
Yes, Mini Egg rocky road is suitable for vegetarians if you make sure to use Cadbury Mini Eggs and gelatine-free marshmallows.
Sometimes, candy coatings can contain shellac or other ingredients to make candy shiny. Shellac is made from insects, so it isn't suitable for vegetarians.
Equally, some food colourings are made from animal-derived products, so if you use different types of off label Mini Eggs, make sure that they are vegetarian.
Years ago in the UK, Cadbury Mini Eggs were not suitable for vegetarians as they contained animal products in the shell. However, at the time of writing this recipe (January 2022), they are now totally vegetarian-friendly.
When making food for someone with dietary requirements, it's essential to check the labels for every ingredient. Animal-derived products can sneak into the most unexpected foods. For example, you were probably surprised to learn that marshmallows contain meat or that candy can contain insects. So it's always best practice to check the labels.
Is Mini Egg rocky road suitable for vegans?
No, Mini Egg rocky road isn't suitable for vegans as it mainly consists of dairy ingredients.
However, there's no cooking involved in this recipe, so you could try and make a vegan version with melted vegan chocolates and plant-based butter. So here's a rundown of the ingredients and whether you need to find a vegan alternative.
Butter:
There are lots of brands offering plant-based butter worldwide. I tend to use Flora, as it has a similar fat content to dairy butter.
A similar fat content will help the plant-based butter behave similarly to dairy butter, so if you make a vegan version, you must find one with a fat content of around 80%.
Chocolate:
To make a vegan version, you'll need to use vegan chocolate.
Vego brand is available worldwide and is one of the better quality vegan chocolates available. You can find Vego in various forms on Amazon or from Vegan food stores. Though it is chocolate and hazelnut flavour, so bear that in mind if you don't like hazelnuts or have a nut allergy!
HIP is another good quality vegan chocolate, made using oat milk. Again, it's available on Amazon and in some supermarkets or vegan food stores.
Unfortunately, vegan chocolate is often more expensive than dairy chocolate, so you might need to shop around to find a good deal. (Or stock up during Veganuary when there tends to be offers on!)
Mini Eggs:
Doisy and Dam are a vegan chocolate brand that makes vegan versions of much-loved chocolate classics. Luckily for vegans they now have Mini Eggs in their range!
However, vegan Mini Eggs tend to contain darker chocolate than Cadbury's Mini Eggs, so bear that in mind if you use them. During Easter, you can usually find vegan chocolate eggs in supermarkets or health food stores like Holland and Barrett.
While vegan chocolate is made to taste and look like dairy chocolate, it behaves slightly differently from dairy chocolate because it doesn't contain dairy proteins. So I can't be sure how this vegan version of the Mini Egg rocky road will turn out as I haven't tested a vegan recipe.
Digestive biscuits / Graham crackers:
In the UK, we call Graham crackers 'Digestive biscuits'. They're called 'Digestive biscuits' because they were initially created to provide dietary fibre and help digestion.
The most popular brand of Digestive biscuits is McVities. At the time of writing (January 2022), plain McVities Digestive biscuits are vegan.
Many supermarkets offer their own version of Digestive biscuits, though not all are vegan. So again, checking the labels is always best practice.
Marshmallows:
As I said earlier, marshmallows can contain animal-derived products. My favourite brand of vegetarian and vegan-friendly marshmallows are Freedom Mallows, which are available on Amazon or in some supermarkets.
There are some other brands of vegan marshmallows, so you just keep an eye on the labels when you choose your marshmallows for this recipe.

Is Mini Egg rocky road gluten-free?
This recipe isn't gluten-free by default, but you could certainly have a go at making it suitable. You'd need to use gluten-free chocolate, gluten-free digestives, gluten-free marshmallows and gluten-free mini eggs, of course, and check the label on your other ingredients.
Luckily many popular brands of these ingredients are 'accidentally vegan'. So just check some labels on the chocolate aisle and you'll find some easily. Also, many supermarkets have their own 'Free From' aisle, where you can find gluten-free chocolate and biscuits.

Nothing in this recipe would usually pose a risk to pregnant people if all the ingredients are in good condition and the Mini Egg rocky road is prepared hygienically.

Yes, if you like, you can leave the Digestive biscuits out or replace them with a similar weight in extra chocolate chips or Mini Eggs.
If you decide to up the marshmallow content in their place, remember that marshmallows are much lighter, so you'll only want to add about half the equivalent weight.
I haven't got digestive biscuits or Graham crackers. Can I use cookies or other biscuits?
Yes, feel free to use any biscuit or cookie in this recipe: custard creams, Oreos, bourbon biscuits or even pink wafers would all work well.
Just make sure whatever you choose is suitable for the dietary requirements of anyone who'll be enjoying your Mini Egg rocky road.
Can I add extra Mini Eggs/marshmallow/biscuit to this recipe?
You can add a little extra of everything to this recipe but do so sparingly, as adding too many additions to your Mini Egg rocky road could mean that it won't hold together properly and crumbles when cut.

Replace the lid to seal, then place in the freezer, where they'll keep for about a month.

Of course, making half the amount of mixture means you'll either need to use a smaller tin or settle for a flatter rocky road - it's up to you!

You could, in theory, use the slow cooker to melt the chocolate, butter and golden syrup together, but it wouldn't be convenient.
You need the chocolate mixture to cool before adding the additions; otherwise, the white chocolate chips and marshmallows would melt, and the biscuit would get soft and possibly disintegrate.
How can I make sure my Mini Egg rocky road is perfectly made?
I always recommend measuring everything out and getting all your equipment ready before starting. That way, you're much less likely to run into problems.
The main thing to remember is to allow the chocolate/butter/syrup mixture to cool before adding the marshmallows, Mini Eggs, chocolate chips and biscuits. That way, you'll avoid melting your additions.
Why did my Mini Egg rocky road turn out brittle/crumbly?
It might be that you overheated the chocolate at the beginning of the recipe. When chocolate is overheated, it can seize and become grainy.
You only need to warm your chocolate until just melted, so only use 30-second bursts in the microwave, stirring each time so that you can see how it's going.
Milk chocolate melts between 105-115°F (40-45°C). So if you're struggling, you could try using a cooking thermometer to make sure you don't overheat the chocolate.
Alternatively, it might be that the rocky road is very cold. Try leaving it for 15 minutes before slicing, and you may find it easier to work with.
Why did my Mini Egg rocky road turn out too soft?
If your rocky road is overly soft, it might be that you added too much butter or syrup or too little chocolate.
To avoid mistakes with ratios, I always recommend measuring everything out before you start. If you have everything measured out in advance, you're less likely to make mistakes.
Alternatively, it could be that your Mini Egg rocky road just needs longer to chill. Allow it at least a couple more hours in the fridge, and it should firm up.
How can I add/change the flavours in my Mini Egg rocky road?

I think leaving the chocolate unflavoured is best for this recipe as it allows the familiar flavour of the Mini Eggs to shine through.
However, you could add a few drops of flavour extract in with the chocolate at the melted stage if you like. For example, orange extract could be lovely, or peppermint would work well.
Australian rocky road contains glacé cherries, coconut, marshmallows and nuts. So you take inspiration from the original version and add these ingredients. Though be careful not to add too much, or the rocky road won't hold together.

Some stories claim that the name 'rocky road' comes from the rocky roads prospectors take to the goldfields, which seems appropriate because eating a good rocky road feels like striking gold!

While we don't know who created rocky road, we do know that Rocky Road ice cream was created in 1929 by William Dreyer in Oakland, California. Rocky Road ice cream is one of the most popular flavours of ice cream in the US.
It usually contains some variation of chocolate ice cream, nuts, and whole or diced marshmallows. The name 'rocky road' was coined after the Wall Street Crash and the Great Depression. Dreyer and his business partner thought the name would "give folks something to smile about amid the Great Depression."
