Mini Egg rocky road

Mini Egg rocky road is that classic combination of chocolate, marshmallows and biscuit, made perfect for Easter with a generous helping of Mini Eggs.

Rocky road is really just fridge cake by another name, and ingredient do vary, although I think the marshmallows are essential. Luckily for any vegetarians in your family, it's now really easy to get vegan marshmallows from most supermarkets, so they needn't miss out!

To make your Mini Egg rocky road, you'll melt milk chocolate with butter and golden syrup, allow it to cool, then stir in all your additions: digestive biscuits, white chocolate chips, marshmallows and, of course, Mini Eggs.

You'll then pile the deliciously chocolatey mixture into a lined tin, top with extra Mini Eggs and chill until set before cutting into squares.

Here's how to make my Easter rocky road.

Ingredients

  • 400 g milk chocolate
  • 100 g butter
  • 100 g golden syrup
  • 100 g white chocolate chips
  • 70 g digestive biscuits broken into chunky pieces
  • 50 g small marshmallows vegetarian, if required
  • 300 g Mini Eggs 2/3 in the mix, 1/3 on top

Equipment

  • 18cm (7 inch) square baking tray
  • Baking paper
  • Weighing scales
  • Measuring spoons
  • Kitchen knife
  • Chopping board
  • Large mixing bowl
  • Wooden spoon

Instructions

Put the milk chocolate, butter and golden syrup in a large heatproof bowl.

Melt gently in the microwave (in 30 seconds blasts) or over a bain-marie and stir until melted and smooth.

Allow to cool a little - if the chocolate is hot, it'll melt the additions.

Add the white chocolate chips, digestives, marshmallows and two thirds (200g / 7oz) of the Mini Eggs.

Stir well until everything is evenly coated.

Tip the mixture into the tray lined with baking paper.

Press to level off.

Top with the remaining (100g / 3.5 oz) Mini Eggs.

Place in the fridge overnight to set. Once set, cut into 16 squares and enjoy.

Pointers, tricks and troubleshooting tips for the perfect Mini Egg rocky road

Is Mini Egg rocky road easy to make?

This is a super simple recipe to make! To prepare your Mini Egg rocky road, you'll simply melt chocolate with golden syrup and butter (in the microwave is easiest) then allow it to cool before folding in the biscuit, marshmallows, Mini Eggs and white chocolate chips.

You'll then spoon the mixture into a lined tin, chill until set, cut into squares and you're done. No cooking, no fuss - it couldn't be easier!

Will I need any special equipment to make Mini Egg rocky road?

No special equipment is required to make this Mini Egg rocky road. You should be able to find everything you need in the average kitchen.

You'll just need weighing scales and measuring spoons, a mixing bowl and spoon, a baking tray and parchment, and a kitchen knife and chopping board.

Where can I buy chocolate Mini Eggs?

Most supermarkets stock Cadbury Mini Eggs, which is the brand I used in the pictures shown. Any brand will do, though!

You'll usually find Mini Eggs in the chocolate/confectionary section, or you can buy them online.

I'm vegetarian, where can I buy suitable marshmallows?

My favourite brand of gelatine-free marshmallows is Freedom Mallows. You can buy them in several supermarkets in the UK, or online.

Do I need to include the golden syrup?

Yes, the golden syrup is important to help hold the Mini Egg rocky road together, and also (along with the butter) to give the chocolate the right consistency.

If you don't have any golden syrup, you could try using light agave syrup, light corn syrup or glucose syrup. I wouldn't recommend using honey as it would affect the flavour of your rocky road.

Is Mini Egg rocky road suitable for vegetarians?

If you use gelatine-free marshmallows, then yes, this recipe is suitable for vegetarians.

Don't forget to check the label on your other ingredient too, to be certain. Years ago in the UK, Cadbury Mini Eggs were not suitable for vegetarians as they contained animal products in the shell, but today they're totally vegetarian-friendly. If you're using a different brand, they may not be.

Is Mini Egg rocky road suitable for vegans?

This recipe isn't suitable for vegans as it includes butter and dairy chocolate.

To make a vegan version, you would need to use a plant-based butter, vegan milk chocolate, vegan marshmallows, vegan digestive biscuits (some popular brands are accidentally vegan) and, of course, vegan mini eggs.

Is Mini Egg rocky road gluten-free?

This recipe isn't gluten-free by default, but you could certainly have a go at making it suitable. You'd need to use gluten-free chocolate, gluten free digestives, gluten-free marshmallows and gluten free mini eggs, of course, and check the label on your other ingredients.

Coeliac UK publish an annual list of gluten-free Easter products. The 2021 list has not yet been published at the time of writing, but when it's ready, you'll find it here.

Is Mini Egg rocky road keto-friendly?

This recipe is high in sugar and not suitable for a keto diet.

Is Mini Egg rocky road healthy?

This is a high fat, high sugar Easter treat, not a day-to-day recipe. Enjoy in a sensible portion, as part of a balanced, varied diet.

Is Mini Egg rocky road safe to eat while pregnant?

There is nothing in this recipe that would usually pose a risk to a pregnant woman as long as all the ingredients are in good condition and the Mini Egg rocky road is prepared hygienically.

Mini Egg rocky road is a varied treat in every bite, but they go down very well with a cup of tea or coffee.

Can I make Mini Egg rocky road without digestive biscuits?

Yes, you can leave the digestive biscuits out, if you like, or replace them with a similar weight in extra chocolate chips or Mini Eggs.

If you decide to up the marshmallow content in their place, remember that marshmallows are much lighter, so you'll only want to add about half the equivalent weight.

I haven’t got digestive biscuits can I use crackers or cookies?

You could use any biscuit in this recipe: custard creams, Oreos, bourbon biscuits or even pink wafers would all work well. Just make sure what ever you choose is suitable for the dietary requirements of anyone who'll be enjoying your Mini Egg rocky road.

Can I add extra Mini Eggs/marshmallow/biscuit to this recipe?

You can add a little extra of everything to this recipe but do so sparingly as adding too many additions to your Mini Egg rocky road could mean that it won't hold together properly and crumbles when cut.

How should I store Mini Egg rocky road?

Mini Egg rocky road should be placed in a sealed container to keep it fresh. You can keep it in a cool cupboard or pantry, or in the fridge, depending on how you like your chocolate.

The less empty space in the container the better as this helps reduce the likelihood of freezer burn (where frost and damaged-looking patches appear on your frozen food).

Replace the lid to seal, then place in the freezer, where they'll keep for about a month.

What is the best way to defrost Mini Egg rocky road?

Remove the container from the freezer and transfer to the fridge to defrost your Mini Egg rocky road overnight, then enjoy as normal.

Can I make Mini Egg rocky road in a different quantity?

Yes, you can reduce the amount of mixture you make. This recipe make 16 squares, so if you wanted to make a half batch, for example, scroll down to the recipe card at the bottom of this article and use the slider to change the number of portions to 8.

Of course, making half the amount of mixture means you'll either need to use a smaller tin, or settle for flatter rocky road - it's up to you!

Likewise, if you increase the amount of mixture, you'll need a larger tray.

Can I make Mini Egg rocky road in a different tin/tray?

You can make this Mini Egg rocky road in any tray you like, really. Aim for the mixture, once in the tin, to be no less than 2cm (3/4 inch) thick and no more than 4cm (1.5 inches) thick or you may find it's either too thin to hold its shape or too thick to cut through.

Can I make Mini Egg rocky road in the slow cooker or Instant Pot?

You could, in theory, use the slow cooker to melt the chocolate, butter and golden syrup together, but it wouldn't really be convenient. You need the chocolate mixture to be cool before you add the additions, otherwise the white chocolate chips and marshmallows would melt and the biscuit would got soft and possibly disintegrate.

How can I make sure my Mini Egg rocky road is perfectly made?

I always recommend measuring everything out and getting all your equipment ready before you start. That way, you're much less likely to run into problems.

The main thing to remember is to allow the chocolate/butter/syrup mixture to cool before you add in the marshmallows, Mini Eggs, chocolate chips and biscuit. That way, you'll avoid melting your additions.

Why did my Mini Egg rocky road turn out brittle/crumbly?

It might be that you overheated the chocolate at the beginning of the recipe. When chocolate is overheated, it can seize and become grainy. You only need to warm your chocolate until just melted, so only use 30 second bursts in the microwave, stirring each time so that you can see how it's going.

Alternatively, it might be that the rocky road is very cold. Try leaving it for 15 minutes before slicing, and you may find it easier to work with.

Why did my Mini Egg rocky road turn out too soft?

If your rocky road is overly soft, it might be that you added too much butter or syrup, or too little chocolate. I always recommend measuring everything out before you start so that you're less likely to run into problems.

Alternatively, it could be that your Mini Egg rocky road just needs longer to chill. Allow it at least couple more hours in the fridge and it should firm up.

How can I add/change the flavours in my Mini Egg rocky road?

I think leaving the chocolate unflavoured is great for this recipe as it allows the familiar flavour of the Mini Eggs to shine through. However, if you like, you could add a few drops of flavour extract in with the chocolate at the melted stage. Orange extract could be lovely and peppermint would work well.

What is the origin of rocky road? Where does its name come from?

As with many desserts that have gained worldwide popularity, the exact origin of rocky road is debated, but its earliest mention harks back to 1850s Australia, where it's thought to have been designed to keep confectionary from spoiling on long trips.

Some claim that the name 'rocky road' come from the rocky roads prospectors would take to the gold fields.

Rocky Road is, of course, very similar to Tiffin, which has been made in Scotland since at least the 1900s, while many American companies claim that they were the first to develop rocky road in the 1800s.

Traditional Australian rocky road includes glacé cherries, coconut, marshmallows and nuts, while British Rocky road tends to include dried fruit and digestives. In the US, marshmallows and nuts rein supreme.

However you like your rocky road, I reckon it's pretty much always delicious!
