Quick vegetarian sausage rolls – perfect lunchbox recipe

I discovered sausage rolls in my lunchbox today! – JD, 4

JD has officially grown bored of sandwiches, so we made up these sausage rolls to go in his lunchbox. This quick vegetarian recipe for kids uses ready roll pastry so it’s quick and easy to make.

Ingredients

  • 320g Just-Rol puff pastry sheet
  • 8 frozen vegetarian Lincolnshire style sausages (we used ASDA’s own brand)
  • 1 free egg, beaten

Instructions

1. Prepare a floured surface and your ingredients – the sausages can still be frozen but the pastry must just be chilled


2. Unroll the pastry, leaving the backing sheet on for now

3. With a sharp knife, score into 8 equal pieces


4. Line up a sausage (still frozen) with the edge of the a pastry square and roll slightly, then press along the edge

5. Continue rolling and press the pastry along the seam

6. Place on a non stick baking tray, seam down and repeat until all 8 are wrapped. Note: we found a pastry was a smidgen longer than each sausage, so we rimmed with a knife before placing on the tray

7. Slash each roll three times diagonally with a sharp knife

8. Brush each roll with a little beaten egg

9. Bake at 220C (200C fan assisted) for 20 minutes or until golden and well puffed

I warn you, these are very moreish, so put them away in an airtight container in the fridge as soon as they’re cool or there will be none left for lunch.

  1. This is a great idea. I like buying the veggie sausage rolls but I dont like the fact that most of them have a bunch of junk in the white flour part, so maybe I can even try to make my own pastry. Thanks!!

  2. Ooo now I ate my first veggie sausage this week and loved it! All I need now is an oven and I’ll be set for these. Scamp adored the veggie sausages so one day *prays to the oven gods* we’ll make these.

    Cool idea for a lunch box :D

  4. I saw Lorraine Pascale do something similar with sausages. I was always taught to use sausage meat or take the skin off the sausages which makes the sausage rolls easier to bite into. But I guess if you are using frozen sausages that is not going to be so easy!
