Go and look in your fruit bowl. Is it full of ripe and overripe fruit? Yes? Any bananas in there? Good. Then grab a few and make this moist, flavourful dark chocolate chip banana bread.
You'll need only a handful of simple ingredients for this recipe: ripe bananas, dark chocolate chips, baking margarine, sugar, eggs, baking powder and wholemeal self-raising flour.
You can use white self-raising flour if you prefer but, trust me, the wholesome richness and texture of the wholemeal flour works just perfectly, so give it a try if you can.
With this dark chocolate chip banana loaf recipe, you get a lovely, sweet, soft sponge thanks to golden granulated sugar and, of course, the bananas.
I love the addition of bittersweet dark chocolate chips because they provide such a pleasing contrast to that sweet sponge, and all the flavours mingle together beautifully on the tongue.
Here's how to make dark chocolate chip banana bread.
Ingredients
- 115 g (4.1 oz) baking margarine melted
- 4 small ripe bananas (save one for on top)
- 170 g (6 oz) golden granulated sugar (cane sugar)
- 2 medium free range eggs
- 200 g (7.1 oz) wholemeal self-raising flour (self rising flour)
- 1/2 tsp baking powder
- 100 g (3.5 oz) dark chocolate chips (bittersweet)
Instructions
Preheat the oven to 180C (160C fan).
Put three of the bananas into a large bowl.
Mash with a fork.
Add the sugar and margarine.
Beat until creamy.
Add the eggs.
Beat again.
Add the flour and baking powder.
Fold through.
Add the chocolate chips.
Stir gently until the chips are evenly distributed.
Line a loaf tin with baking paper.
Pour in the mixture and gently level off.
Slice the remaining banana in half lengthways and place on top of the batter.
Bake for 1 hour until golden brown on top and fully cooked through. You can check this by pushing a skewer into the centre of the loaf. If it comes out clean, the cake is ready.
When completely cooled, slice your chocolate chip banana loaf like bread and enjoy!
If you're bananas for bananas, you can even enjoy your banana loaf with slices of fresh banana on top. Delicious!
And for an even more decadent treat, drizzle the whole thing with a little melted dark chocolate. Irresistible!
