This incredible air fryer cheese and mushroom toastie is made extra special with red onion, paprika, garlic and two types of cheese.
It's the perfect lunch to whip up for fans of grilled cheese, garlic mushrooms and bags of flavour.
To make this fabulous toasted sandwich, you'll first use your airfryer to fry red onion, garlic and paprika in butter, olive oil.
Next, you'll assemble your cheese and mushroom toastie in your air fryer basket, sandwiching your garlic mushrooms and plenty of shredded cheddar and mozzarella cheese between two slices of buttered, crusty bread.
You'll top your toastie with a little extra cheese and paprika before cooking in the air fryer until golden and bubbly on top and perfectly oozy inside.
This is the kind of toastie you'll be dreaming about for weeks after you try it - and you'll be making it again and again!

Ingredients
- 3 tbsp salted butter
- 1 tsp olive oil
- 3 cloves garlic minced
- ½ small red onion peeled and finely chopped
- 1 pinch smoked paprika
- 1 pinch black pepper
- 150 g large flat mushrooms sliced
- 1 pinch salt
- 4 slices crusty bread
- 75 g cheddar cheese grated
- 75 g shredded mozzarella cheese
Instructions
Put the olive oil and 1 tbsp butter in a dish in your air fryer.
Add the garlic, onions, smoked paprika and black pepper.
Set the air fryer to 180C/355F and cook for 5 minutes.
Stir, add the mushrooms and dot the last of the butter on top.
Put back in the air fryer and cook for a further 5 minutes.
Set the dish aside.
Butter each slice of bread with 1 tbsp of butter. Place two slices of bread in the air fryer, butter side down.
Sprinkle with half the cheddar and mozzarella cheese.
Layer the mushrooms on top.
Sprinkle half of the remaining cheese on top.
Top each toastie with the remaining slices of bread, butter side up.
Sprinkle with the last of the cheese and a final pinch of smoked paprika.
Set the air fryer to 160C/320F and bake for 10 minutes until the bread is golden and the cheese is melted.
Cut in half to serve. It's great with a little salad.
