    Air Fryer Fruit Scones

    These air fryer fruit scones are light, buttery, gently sweet and absolutely delicious.

    The dough can be made in a minutes and they take just 17 minutes to bake in the air fryer.

    To make the dough, you'll start by soaking the fruit in Earl Grey tea.

    Meanwhile, you'll mix the flour, sugar and baking powder in a bowl, add the cold, cubed butter and rub everything together until you have a slightly yellow crumb. You'll then cut in a splash of milk with a cutlery knife and finally stir in the drained fruit.

    To finish, you'll form the dough into a rough round, cut it into eight wedges, and then lift the scones into the air fryer basket. A light brush of milk, and then they're ready to bake until risen, golden and irresistibly delicious.

    These air fryer fruit scones are perfect for serving as part of a traditional afternoon tea, served with butter and jam, but they're also amazing as part of a breakfast or brunch with some fresh fruit and yoghurt.

    If you're not used to using the air fryer to bake, you're going to love this recipe because it's very quick, and very hard to get wrong!

    Ingredients

    • 200 g (7.1 oz) dried fruit I used cherries and sultanas
    • 1 Earl Grey teabag
    • 400 g (14.1 oz) self-raising white flour (self rising flour) plus some for dusting
    • 1 tsp granulated white sugar
    • 1 tsp (0.5 tsp) baking powder
    • 100 g (3.5 oz) salted butter cold and cubed
    • 200 ml (6.8 floz) whole milk plus a little to brush the tops

    Equipment

    • Weighing scales
    • Measuring spoons
    • Large bowl
    • Small mixing bowl
    • Cutlery knife
    • Pastry brush
    • Air fryer

    Instructions

    Put the fruit in a bowl with the tea bag and cover with approximately 100ml (1/2 cup) of boiled water. Leave to soak for 15 minutes, then remove the tea bag, drain and thoroughly pat dry on kitchen towel.

    Put a liner in the air fryer basket and lightly dust with flour.

    In a bowl, mix the flour, sugar and baking powder. Then add the cubed butter.

    Using the tips of your fingers, rub in the butter until you have an even crumb.

    Slowly add the milk while mixing using a flat knife. The mixture should start to clump together.

    Add the soaked fruit.

    Stir to distribute.

    Tip the dough onto a floured surface and gather together, handling just enough to form into a disc that will fit in your air fryer basket. Don’t overwork the dough.

    Cut the disc into eight equal triangles.

    Lift the scones into the lined air fryer basket and brush the tops with milk.

    Set the air fryer to 160C/320F and bake for 17 minutes until the scones are puffed and golden.

    Allow to cool before serving.
