    Air Fryer Brownies

    If you're craving some deeply chocolatey, perfectly fudgy little brownie squares without having to turn the oven on, these air fryer brownies are for you.

    The batter is made with dark chocolate, salted butter, sugar, eggs, vanilla and flour, and it's studded with a generous handful of milk chocolate chips.

    Some people struggle with baking in the air fryer, often because the blast of hot air can cause recipes designed for the oven to brown on the outside before they're baked in the middle.

    The trick with these brownies is to make them a lot more shallow than you would with standard oven brownies. That way, they cook perfectly and you get a shiny, crinkly top and a perfectly set, fudgy brownie beneath.

    You can make the batter for your air fryer brownies in a single bowl. You'll melt the chocolate and butter together in the microwave (or over a pan of simmering water), then stir in the sugar, beaten eggs and vanilla, followed by sifted flour.

    You'll then fold in chocolate chips and pour your brownie batter into a greased tin. I use a silicone tin measuring 20cm x 18cm x 8cm (8ins x 7ins x 3ins) because it fits perfectly in my Cosori 4.7L Air Fryer's basket. If you have a considerably smaller tin, you might want to bake the batter in two batches to avoid having a brownie that is too deep to cook all the way through properly.

    This recipe makes 16 perfect little air fryer brownies, perfect for snacking, desserts, taking on a day out or road trip, or bringing along to a party.

    Ingredients

    • 140 g (4.9 oz) dark chocolate 70% (bittersweet) roughly chopped
    • 100 g (3.5 oz) salted butter cubed
    • 150 g (5.3 oz) white caster sugar (superfine sugar)
    • 2 medium free-range eggs room temp beaten
    • 1 tsp vanilla extract
    • 60 g (2.1 oz) plain white flour (all purpose flour)
    • 100 g (3.5 oz) milk chocolate chips

    Equipment

    • Weighing scales
    • Measuring spoons
    • Large mixing bowl
    • Whisk
    • Silicone spatula
    • Baking tin to fit your air fryer (20cm x 18cm x 8cm / 8ins x 7ins x 3ins)
    • Air fryer
    • Kitchen knife
    • Chopping board

    Instructions

    Grease your tin.

    Put the dark chocolate and butter in a large microwave-safe bowl.

    Microwave in 30-second bursts, stirring between each burst until melted. Avoid overcooking as this can negatively affect the chocolate.

    Add the caster sugar, beaten eggs and vanilla.

    Stir through with a manual whisk - I say stir as you don’t want to add air but a whisk is still the best tool as it distributes everything quickly.

    Put the flour through a sieve into the bowl. 

    Stir to combine.

    Add the chocolate chips.

    Stir through.

    Pour the brownie batter into your greased tin and level off. Set the air fryer to 140C/285F and bake for 35 minutes until a skewer pushed into the centre comes out with sticky crumbs.

    Allow to cool in the tin, then chill overnight to make them easy to slice.

    Slide onto a serving board and slice in 16 pieces (in a pattern of 4 by 4).
