    Air Fryer Oatmeal Raisin Cookies

    Perfectly crisp and chewy, these air fryer oatmeal raisin cookies are supremely tasty and can go from bowl, to air fryer, to your tastebuds in about half an hour.

    Air fryers are really great at producing crisp yet chewy cookies, in my experience, and this recipe is no exception.

    They're every bit as good as cookies baked in a traditional over, if not better!

    To make the dough, you'll start by beating butter and light brown sugar together, followed by eggs and vanilla.

    You'll then fold in the oats and flour, followed by the raising and that's how simple it is to make your air fryer oatmeal raisin cookie dough.

    To bake them, you'll divide the dough into balls and then bake them in the air fryer four or five at a time.

    They spread just enough to give perfectly round, hearty cookies that are genuinely irresistible.

    Enjoy these cookies on their own, with a hot drink, or packed into your lunchbox or backpack for an afternoon snack.

    You can also have a go at tweaking the recipe, if you like. I think adding milk chocolate chips could work really well.

    Ingredients

    • 125 g (4.4 oz) salted butter
    • 150 g (5.3 oz) golden granulated sugar
    • 1 medium free range egg
    • 1/2 tsp (0.5 tsp) vanilla extract
    • 1 tbsp milk
    • 140 g (4.9 oz) rolled oats
    • 110 g (3.9 oz) self-raising white flour
    • 100 g (3.5 oz) raisins

    Equipment

    • Weighing scales
    • Measuring spoons
    • Large mixing bowl
    • Whisk
    • Wooden spoon
    • Parchment/baking paper
    • Wire cooling rack
    • Air fryer

    Instructions

    Cut a piece of greaseproof to about the same size as the base of your tray. Fold it in half 3-4 times to create a thin triangle. Make holes with a skewer or hole punch and unfold.

    Put the butter and sugar in a large bowl.

    Mix until fluffy.

    Add the milk, egg and vanilla extract.

    Whisk together.

    Sift in the flour, add the oats.

    Fold to combine.

    Add the raisins.

    Mix again.

    Divide your dough into 20 portions of dough, rolled into balls. You can eyeball this, or if you want to be super accurate, you can divide the dough into 20 x 34g portions.

    Place 4-5 at a time into your lined tin, spaced apart to allow them to spread.

    Set the air fryer to 140C/285F and bake the cookies for 15 minutes until golden.

    Cool briefly on the tray to allow them to firm up, then transfer to a cooling rack with a spatula.

    They can be enjoyed completely cooled or still a little warm. Oh, heaven!
