    Flat bread pizza recipe

    This flat bread pizza recipe uses Greek flat breads, tinned pasta sauce, torn mozzarella and a few sliced peppers to produce a gorgeous lunch that takes minutes to make and tastes incredible.

    We tend to make this quick lunch option out of sheer laziness, but it really does look and taste the business.

    What's more, while we tend to go for a classic combination of red peppers and rocket, these pizzas can be easily tweaked with different toppings to suit whatever cravings you may have that day.

    You can use any flat bread you like, but I tend to opt for Greek flat breads - the kind you'd use for gyros - since they're soft and round and crisp up in the oven, leaving just the right amount of soft interior to balance with the toppings.

    Here's how to make my flat bread pizza recipe - serves four.

    Ingredients

    • 4 thin flatbreads I used gyro-style flatbreads
    • 250 g (1 cup) pasta sauce
    • 250 g (8 oz) fresh mozzarella
    • 1 red bell pepper thinly sliced
    • 2 tbsp olive oil
    • salt and black pepper
    • 50 g (2 oz) fresh rocket (arugula)

    Equipment

    • Weighing scales
    • Spoon
    • Nonstick baking sheet
    • Kitchen knife
    • Chopping board

    Instructions

    Preheat the oven to 220C (200C fan, 425F).

    Place the flatbreads on two baking sheets.

    Spread with the pasta sauce, going almost to the edges.

    Tear pieces of mozzarella and dot on top of the pizzas.

    Add the sliced peppers.

    Season with salt and pepper and drizzle with a little olive oil.

    Bake for 5 minutes.

    Transfer the pizzas to boards.

    These flatbread pizzas are as simple as they look to make, could be easily tweaked with different toppings, take minutes to cook and, most importantly, taste flipping lovely with a super thin base that's crispy at the edges.

    Try any other toppings you fancy. How about fresh black olives or pepperoni? Be sure to cut any toppings thinly so that they cook quickly in the oven.
