Brownies and Oreos are a perfect combination. The fudgy, rich brownie is perfectly complemented by the crisp chocolate Oreo cookie with its trademark creamy filling.
In fact, brownies and Oreos make such a popular combination that in 2015, Nabisco launched Brownie Batter Oreo cookies (Or "Choc'O Brownie flavour Oreos") as a new variety!
So if you want to make this recipe a step further, you could go meta and use Brownie Batter Oreos in this Oreo Brownies recipe. Mind. Blown.
To make your Oreo Brownies, you'll melt some chocolate and butter together, then whisk in sugar, followed by eggs, vanilla and then flour to make a lovely, chocolatey batter.
Next, you'll pour half of your batter into the greased baking tray and drizzle on a sneaky ingredient that takes these brownies to the next level and beyond: cookies and cream spread!
You'll then top the batter with Oreos and cover with the remaining batter before drizzling with more spread. Finally, you'll top the brownies with broken Oreo pieces.
To cook your brownies, you'll pop them in the oven for 30 minutes until they're just set. Remember, brownies aren't like cakes; you want them sticky and fudgy, not baked to a crumb consistency like a sponge.

For the brownie batter
- 400 g (14.1 oz) dark chocolate 70% (bittersweet) roughly chopped
- 280 g (9.9 oz) slightly salted butter cubed
- 6 medium free range eggs room temp, beaten
- 1 tbsp vanilla extract
- 170 g (6 oz) plain white flour (all purpose flour)
To assemble
- 125 g (4.4 oz) Cookie and Cream Spread
- 360 g (12.7 oz) Oreo Cookies

Instructions
Make the brownie batter
Preheat the oven to 180C (160C fan).
Grease and line your tin.
Put the dark chocolate and butter in a large microwave-safe bowl.
Microwave in 30-second bursts, stirring between each burst until melted. Avoid overcooking as this can negatively affect the chocolate.
Add the caster sugar.
Stir through with a manual whisk - I say stir as you don’t want to add air but a whisk is still the best tool as it distributes everything quickly.
Add the eggs and vanilla.
Stir with the whisk again.
Put the flour through a sieve into the bowl.
Stir to combine.
Assemble the brownie
Place the cookies and cream spread in a bowl and microwave for 15-30 seconds until loosened.
Pour half of the brownie batter into your prepared tin and level off.
Drizzle half the spread over the brownie batter.
Top with three quarters of the Oreo cookies (reserve about 8 cookies or 60g).
Pour the remaining brownie batter on top and level off.
Drizzle with the remaining spread and swirl a little with the handle end of a spoon.
Top with the remaining broken Oreo cookies.
Bake for 30 minutes. You can test if it's baked by pushing a skewer into the centre. If just right, you'll see sticky crumbs.
Place the brownie in its tin on a wire rack to cool completely. I like to then chill mine overnight to get them nice and firm for slicing.
Once completely cooled, transfer the brownie slab to a board and trim the edges, then cut into 12 equally sized Oreo Brownies squares in a 3x4 pattern.
