    Parsnip Fries (Baked)

    Load up your favourite burger side with some extra vitamins and minerals with this easy baked parsnip fries recipe!

    First cultivated by the Romans, parsnips have been on our plates for thousands of years. And for good reason, because parsnips might be the perfect root vegetable, boasting a host of nutritional benefits, plus the fluffy-crispy-making qualities of a potato.

    Packed full of Vitamin C and fibre, baked parsnip fries are a low-fat way to get that other vitamin C fix - vitamin chips! (Side note for US readers: in the UK we call fries "chips" - hope that clears up any confusion!)

    To make your baked parsnip fries, you'll need a sharp knife and a little bit of patience to get perfectly shaped fries. The more evenly you cut them, the more evenly they'll bake, so it's worth the effort.

    To do this, I like to cut the parsnips in half, then cut them into flat layers, then slice the layers into fries.

    Once the fries are cut, you'll simply toss them in a bowl with the olive oil, cumin, paprika, garlic, oregano, salt and pepper.

    Then it's into your preheated oven for 15-20 minutes or until golden brown. Make sure to give them a little flip halfway through the cooking time so they bake evenly.

    It's easy to forget sometimes that parsnips aren't just for Christmas; they're in stores all year round. So these baked parsnip fries should make for the perfect replacement for carrots or potatoes at any BBQ or as a tasty snack for game night!

    And of course, they would go great with a turkey burger and cranberry sauce on Boxing Day!

    Ingredients

    • 500 g (1.1 lb) parsnips
    • 4 tbsp olive oil
    • 1 tsp ground cumin
    • 1 tsp smoked paprika
    • 1/2 tsp (0.5 tsp) garlic granules
    • 1/2 tsp (0.5 tsp) dried oregano
    • ½ tsp (0.5 tsp) salt
    • ½ tsp (0.5 tsp) freshly ground black pepper

    Equipment

    • Weighing scales
    • Measuring spoons
    • Kitchen knife
    • Chopping board
    • Large mixing bowl
    • Nonstick baking sheet or 2 medium
    • Parchment/baking paper

    Instructions

    Line 1 large or 2 smaller baking sheets with baking paper - your parsnip fries will need to bake in a single layer.

    Preheat the oven to 200C (180C fan, 390F)

    Peel the parsnips and cut them into thin chip (fries). Place the chips in a bowl. 

    Add the olive oil, cumin, paprika, garlic, oregano, salt and pepper.

    Toss to coat evenly (it's easiest to use your hands for this) then transfer the fries to the baking sheet(s), arranging in a single layer. 

    Bake for 15-20 minutes, flipping halfway. 

    Serve hot and crisp.
