    These sweet chilli halloumi kebabs take minutes to prepare and taste great with vegetables, tortellini and halloumi all grilled to perfection.

    The marinade is just sweet chilli sauce and olive oil, so this is a perfect little recipe to put together when you're low on time and need to serve something up for the vegetarians.

    All you do is cut everything into fairly even-sized chunks, push them onto skewers and grill! The results are so tasty, no one will guess they were so simple to make.

    Since this is a meat-free recipe, I used store-bought cheese and tomato tortellini, but you can use any filled pasta you like.

    Here's the full recipe for my sweet chilli halloumi kebabs.

    Ingredients

    • 4 tbsp sweet chilli sauce
    • 4 tbsp olive oil
    • 100 g (3.5 oz) cheese and tomato tortellini (vegetarian if required) cooked and drained
    • 1 red peppers deseeded and cut into 2-3cm (1 inch) pieces
    • 1 courgette cut in 2-3cm (1 inch) half moons
    • 225 g (8 oz) halloumi cheese (vegetarian if required) cut into 2-3cm (1 inch) pieces

    Equipment

    • Weighing scales
    • Measuring spoons
    • Kitchen knife
    • Chopping board
    • Wooden skewers (soaked in water to prevent burning)
    • Small mixing bowl
    • Whisk
    • Silicone pastry brush
    • Griddle pan

    Instructions

    Put the sweet chilli sauce and olive oil in a bowl.

    Mix and set aside.

    Push the courgette, tortellini, halloumi and red pepper pieces onto your skewers in a repeating pattern.

    Lay your skewers on a plate and brush generously on both sides with your chilli marinade. Cover and chill until you're ready to cook.

    Place the skewers on the BBQ or in a griddle pan.

    Cook for just long enough for them to pick up some colour on each side.

    Brush with any remaining chilli marinade and serve.

      It would never have occurred to me to barbecue pasta! My own "go to" for vegetarian barbecue is paneer.

      Oh yes please Emily, what a fab idea. Halloumi on a BBQ is almost traditional now for us vegetarians, but tortellini?
