    Air Fryer Jacket Potatoes

    Your air fryer is the perfect tool to make jacket potatoes. You can cook four at once in a standard basket, it's quicker than the oven, and they bake perfectly.

    I'm a big fan of jacket potatoes and since there are four of us at home, it makes sense to make four at once. But even when I'm home alone and make one for myself, I still stick four potatoes in the air fryer because that way I can refrigerate or freeze the other three until I'm ready to serve them.

    Making baked potatoes in the air fryer is super simple - it's barely a recipe at all. First, you'll pierce them all the way through with a skewer several times. And I do mean all the way through i.e in one side and right through and out the other.

    I know it's common to just prick the skin, but I find skewering them a few times is much more effective in ensuring your potatoes are fluffy right to the centre, so it's a method I always us.

    It hopefully goes without saying that you will need to be sensible about where your hands are as you do this so that you don't skewer yourself in the process!

    Once you've skewered your potatoes, you'll rub them all over with a bit of olive oil and then pop them in the basket of your air fryer. A sprinkle of salt and pepper is option but I'd strongly advise you to go with it as it makes the skin taste a thousand times better.

    Close the drawer, set your air fryer running and in 45-50 minutes, you'll have the most stunningly delicious baked potatoes you can possible make at home. They're like the ones you get from spud vans, if not better - delicate, crisp skin and a fluffy, light, yielding interior that drinks up the butter as it melts.

    • 4 baking potatoes
    • 2 tsp olive oil
    • 1 pinch salt and black pepper to taste

    Instructions

    Push a skewer all the way through each potato a few times to help steam escape and ensure even cooking.

    Rub all over with the olive oil, then place in the air fryer basket and sprinkle with salt and pepper.

    Set the air fryer to 160C/320F and bake for 50 minutes until soft and fluffy all the way to the centre.
