    Baked courgette fries

    With a juicy inner and a crisp and crunchy paprika and garlic crumb, these baked courgette fries are the perfect starter.

    They're really easy to make. And since they're baked, not fried, they're a healthier option too.

    To make them, you'll set up a crumbing station with three bowls. In the first, you'll have flour seasoned with garlic granules and paprika, in the second, beaten egg, and in the third dried breadcrumbs.

    You'll then cut the courgette into chunky chips and dip in the spiced flour, egg, spiced flour, egg and then breadcrumbs. After that, you'll simply spray them with oil and bake!

    The result is golden, crunchy and utterly delicious.

    Here's the full recipe for my baked courgette fries, complete with lots of step-by-step images to help you along the way.

    Ingredients

    • 2 courgette (zucchini) peeled and cut into chunky chips
    • 2 medium free range eggs beaten
    • 100 g (¾ cup) plain white flour (all purpose flour)
    • 100 g (1 cup + 2 tbsp) dried breadcrumbs
    • 2 tsp garlic granules
    • 2 tsp paprika
    • salt and black pepper
    • Spray oil

    Equipment

    • Weighing scales
    • Measuring spoons
    • Kitchen knife
    • Chopping board
    • 3 Small mixing bowl
    • Fork
    • Large saucepan
    • Slotted spoon
    • Kitchen paper

    Instructions

    Preheat the oven to 200C (180C).

    Line a baking sheet with baking paper.

    Set up a crumbing station with three bowls – flour in the first, beaten egg in the second, and breadcrumbs in the third.

    Add the garlic granules, paprika and a big pinch of salt and pepper to the flour.

    Mix the flour and spices together.

    Dip a courgette chip into the flour, coating all over.

    Now dip in the egg, then back in the flour, then the egg again.

    Finally, dip in the breadcrumbs.

    Repeat with the rest of the courgette chips, placing on the lined baking sheet as you go.

    Spray the chips generously with oil.

    Bake for 15 minutes, then turn over and bake for a further 15 minutes.

      Courgettes are the best vegetable in the world - this is a fact! When they are fried in lovely things they become EVEN better.
