Is this Biscoff rocky road recipe easy to make?
Making this Biscoff rock road is really, very simple with only six ingredients:
- White chocolate
- Butter
- Biscoff spread
- Biscoff biscuits
- Marshmallows
- White chocolate chips
You'll start my measuring white chocolate, Biscoff smooth spread and a little butter into a bowl and melting until smooth. I use a microwave for this easy job, but you can use a double boiler / bain marie if you prefer.
To finish, you'll simply place the tray in the fridge until set for a couple of hours and then your delicious Biscoff rocky road is ready to slice into squares and serve!
Will I need any specialist equipment to make this Biscoff rocky road?
You'll only need very simple equipment to make this Biscoff rocky road recipe: weighing scales (or cup measures), a microwave-safe mixing bowl, a wooden spoon or silicon spatula, some baking paper and a 20 x 20 cm (8 x 8 inch) square baking tin.
You'll also need a sharp knife to slice your Biscoff rocky road into squares.
Why is it called rocky road?
It's known for its sweet, crunchy, and chewy texture and is fairly similar to tiffin in the UK, which is usually made with digestive biscuits, milk or dark chocolate, butter, golden syrup and, often, fried fruit and/or nuts.
According to Nestle, rocky road's "name was a play on words referring to the yummy chocolate chunks, but also the ‘rocky road’ that people had to walk during America’s Great Depression."
When could I serve these Biscoff rocky road bites?
The little squares are heaven for Biscoff lovers, with plenty of caramelised cinnamon flavour, and as they're bitesize, they're just perfect as a sweet treat to take to a get-together, bake sale or office pot luck, or to serve at a party or as part of a game day spread.
They bitesize treats are perfect to enjoy all by themselves, but they're also wonderful enjoyed with a coffee, cup of tea or glass of milk.

Ingredients
For the rocky road mixture
- 400 g (14 oz) white chocolate
- 50 g (4 tbsp) salted butter
- 125 g (⅓ cup + 2tbsp) Lotus Biscoff spread
- 100 g (3.5 oz) white chocolate chips
- 25 Lotus Biscoff caramelised biscuits 200g/7oz broken into bitesize pieces
- 100 g (½ cup) mini marshmallows
For the top
- 100 g (⅓ cup) Lotus Biscoff spread
- 7 Lotus Biscoff caramelised biscuits 50g/2oz
Can I use milk chocolate instead of white chocolate?
I prefer to use white chocolate in this recipe because it complements the Biscoff flavour without overpowering it.
I haven't tested this exact recipe with milk chocolate but I think it would work just fine.
Equipment
- Weighing scales (or cup measures)
- Medium mixing bowl microwave safe
- Silicone spatula (or wooden spoon)
- Square 20cm (8") nonstick cake tin
Instructions with step-by-step photographs
Line a 20 x 20cm (8 x 8 inch) baking tin with baking paper.
Put the white chocolate, butter and biscoff in a large heatproof bowl.
Melt gently in the microwave in 20 second bursts, stirring between each burst, or over a bain-marie until smooth. Leave to cool until it feels room temp to the touch but is still liquid.
Add the biscuits, white chocolate chips, and mini marshmallows.
Stir well until everything is evenly coated.
Immediately tip the mixture into your tin lined with baking paper. Level off.
To decorate, gently warm the Biscoff spread in the microwave for about 10 seconds, then drizzle over the rocky road to create a thin covering layer.
Press the Biscoff biscuits on top, breaking some and leaving some whole.
Place in the fridge for at least 2 hours or overnight to set.
Once set, cut into 16 squares in a 4 by 4 pattern and enjoy.

You may have spotted that this recipe isn't vegetarian due to the marshmallow content, but if you'd like to make it vegetarian-friendly, there are lots of gelatine-free marshmallows on the market these days that you could sub for the standard ones.
Freedom Mallows are delicious, and many grocery stores have their own brands these days.
The other ingredients tend to be naturally vegetarian but you should check all your labels to be sure.

You'd have to make a few changes to make this Biscoff Rocky road recipe suitable for vegans.
In addition, you would need to use gelatine-free marshmallows. Freedom Mallows are delicious, and many grocery stores have their own brands these days.

No, this Biscoff rocky road is not gluten free, so you would need to alter the recipe to make it suitable for a gluten free diet.
Whilst white chocolate and marshmallows do not typically contain gluten naturally, they will often bear a 'may contain' label due to gluten products being present in the factory where they are made.
You would therefore need to be careful to source white chocolate and marshmallows that are labelled gluten free and do not bear any mention of gluten in the ingredients or the 'may contain' section of the labels.
For the spread, you have a couple of options:
- You could leave the spread out and just use an additional 125g of white chocolate instead - the recipe will still have plenty of flavour.
- You could try making your own gluten-free Biscoff spread. I haven't tried this myself, but this recipe by Glutarama looks good.

Nothing about this recipe is keto friendly as it's high in sugar and carbohydrates.
You could try adding some speculoos flavouring to some keto white chocolate to achieve something approaching similar flavours.

Also, make sure you add everything together so that the residual heat is quickly brought down by all the additions.
Why did my white chocolate turn grainy?
White chocolate can turn grainy for a few reasons, but the most common reasons is that it has been overheated or exposed to high temperatures during melting.
White chocolate contains cocoa butter, which can become unstable if it's heated too quickly or to a high temperature. When cocoa butter separates from the other ingredients in the chocolate, it can lead to a grainy texture. To avoid this, melt white chocolate gently using a double boiler or in the microwave on a low setting.
To salvage grainy white chocolate, you can try to re-emulsify it by gently reheating and stirring it. However, the success of this method can be limited, especially if the chocolate has been damaged by high heat.
If you're confident you didn't burn your chocolate, it might be that it's poor quality, or past its best, meaning it's not possible to achieve a smooth texture.
