    Chocolate Orange Brownies

    These chocolate orange brownies pull out all the stops to celebrate the marriage of orange and chocolate, with the help of both Terry's and Cadbury chocolate orange.

    One thing that's really important to me with a good brownie is that it's properly fudgy. The top and bottom should have a shiny crust but inside shouldn't be cakey - not at all. It should hold its shape but be soft and yielding. A little slice of heaven.

    Now, for this chocolate orange brownie recipe, I've used my trusty brownie batter than yields perfect results every time and I've introduce all manner of chocolate orange goodness.

    You see, in the centre of every slice is a slab of Cadbury Dairy Milk Orange and on top is orange flavoured candy melts and a segment of Terry's Chocolate Orange Mini Segments. (You can use normal size Terry's Chocolate Orange segments, I just think the mini ones look super cute!)

    In all, it makes for very, very yummy chocolate orange brownies that look the absolute business and pass the taste test with even the most passionate chocolate orange lover.

    You'll start your brownies by making the batter, which is a simple case of melting dark chocolate with butter in the microwave and then stirring in sugar, eggs, vanilla and flour.

    Next, you'll pile half the batter into a lined tin and then carefully position an end to end layer of Cadbury Dairy Milk Orange. You don't have to use Cadbury, of course. You could use any of of the orange flavour chocolates out there: Aero, Galaxy. There are even orange matchmakers and Toffee Crisps these days!

    Once you've layered on the orange chocolate you'll pile in the rest of the batter, level off and bake. Your kitchen will be filled with the heavenly aromas of rich chocolate with citrus notes and your stomach will grumble.

    To get a perfectly fudgy final texture, you'll cool your brownies and then chill them overnight. It takes patience, I know, but in the morning they'll be ready to decorate.

    You'll flavour some orange candy melts with a dash of orange extract and then drizzle them all over the top of the brownie, finishing with row upon row of mini chocolate orange segments.

    It'll set really fast and you'll be able to slice your Chocolate Orange Brownie up and serve it to rapturous applause!

    Below, you'll find the full, detailed recipe for my chocolate orange brownies, along with a photograph of every step so that you can see exactly what to do. Have fun!

    Ingredients

    For the brownie batter

    • 400 g (14.1 oz) dark chocolate 70% (bittersweet) roughly chopped
    • 280 g (9.9 oz) salted butter cubed
    • 450 g (15.9 oz) white caster sugar (superfine sugar)
    • 6 medium free range eggs room temp, beaten
    • 1 tbsp vanilla extract
    • 170 g (6 oz) plain white flour (all purpose flour)

    To fill/top

    • 540 g (1.2 lb) orange flavour milk chocolate (3 large bars)
    • 50 g (1.8 oz) orange candy melts
    • 3 drops orange extract
    • 125 g (4.4 oz) Terry's chocolate orange minis (or 1 full size chocolate orange)

    Equipment

    • Weighing scales
    • Measuring spoons
    • Large mixing bowl
    • Silicone spatula
    • Whisk
    • Sieve
    • Medium roasting pan 35x25cm (14x10")
    • Parchment/baking paper

    Instructions

    Make the brownie batter

    Preheat the oven to 180C (160C fan).

    Grease and line your tin.

    Put the dark chocolate and butter in a large microwave-safe bowl.

    Microwave in 30-second bursts, stirring between each burst until melted. Avoid overcooking as this can negatively affect the chocolate.

    Add the caster sugar.

    Stir through with a manual whisk - I say stir as you don’t want to add air but a whisk is still the best tool as it distributes everything quickly.

    Add the eggs and vanilla.

    Stir with the whisk again.

    Put the flour through a sieve into the bowl. 

    Stir to combine.

    Assemble the brownie

    Pour half of the brownie batter into your prepared tin and level off.

    Place the chocolate orange bars on top, side by side to approximately fill the tin.

    Pour the remaining brownie batter on top and level off.

    Bake for approximately 30-35 minutes until a skewer pushed into the centre comes out with sticky crumbs (bear in mind you may hit Mars Bar, so test in 2-3 places).

    Allow to cool in the tin, then chill overnight to make them easy to slice.

    To decorate

    Slide the brownie onto a serving board.

    Melt the candy melts in 15 second bursts in the microwave, stir in the orange extract and drizzle all over the top of the brownie. 

    Then, before the candy sets, top your brownie with the chocolate orange segments. 

    Pop back in the fridge for 30 minutes to set.

     Slice in 20 pieces (in a pattern of 5 by 4).
