    Apple puff pastry recipe

    With this simple apple puff pastry recipe, you'll need just 4 ingredients (puff pastry, lemon, cinnamon and apples) to make perfectly crisp, flaky apple turnovers.

    They're filled with a soft, sweet filling, still boasting a little bite. They're easy, tasty baking fun.

    When we made a pair of apple puff pastry tarts last week, since we had a ready-rolled puff pastry square still left in the pack, we decided to make these super simple puff pastry apple turnovers.

    Here's what to do.

    Ingredients

    For the filling

    • 2 crisp apples cored and finely chopped
    • 30 g (3 tbsp) demerara sugar (turbinado sugar)
    • ½ tsp cinnamon
    • ½ tbsp lemon juice

    For the pastry

    • 320 g (12 oz) ready-rolled puff pastry
    • 1 medium free range eggs
    • 15 g (2 tbsp) demerara sugar (turbinado sugar)

    Equipment

    • Weighing scales
    • Measuring spoons
    • Kitchen knife
    • Apple corer
    • Chopping board
    • Large mixing bowl
    • Nonstick baking sheet
    • Silicone pastry brush
    • Wire cooling rack

    Instructions

    Preheat the oven to 220C (200C fan).

    Pop the chopped apples in a bowl. lemon juice, cinnamon and 30g (2 tbsp) of the sugar until well combined.

    Add the lemon juice.

    Mix until well combined.

    Unroll one sheet of puff pastry and slice in half along the shorter edge and, three times along the longer edge to create six equal rectangles.

    Place a little of the apple mix into the middle of each section of pastry.

    Folder over to create triangles and pinch along the edges to seal.

    Press a fork along the seams, then transfer to a baking sheet.

    You can trim the edges with a sharp knife for a neater finish, if you like.

    Brush with beaten egg.

    Sprinkle with 15g (1 tbsp) sugar.

    Bake for 15-20 minutes until well browned and puffed up.

    Cool a little on a wire rack (don't bite straight from the oven – the filling will be extremely hot).
