I love everything about this flavourful mackerel vegetable couscous. It features roast vegetables, topped with tinned mackerel fillets in a Moroccan-style sauce made with apricot purée, and served with roasted vine tomatoes.
Often when we see a pic of a delicious-looking meal, we might think, "Wow, that looks good, but it probably takes a lot of work. I just don't have that sort of time." Well think again!
It's perfectly possible to make a healthy, delicious meal in 15 minutes or less. You just have to know where to take the right shortcuts.
How do I know? I've been working a full-time job and raising kids for 10 years and some days, something's got to give! This meal is for one of those days.
Having well-stocked cupboards with plenty of staples I can use as the basis of a host of meals is absolutely essential to speedy, tasty cooking.
With just a few of tins of Princes Mackerel Fillets in a Moroccan Style Sauce with Apricot Purée, you can make something that's rich in Omega 3 and protein, and being skinless and boneless everything is on the table in less than 15 minutes.
This makes 4 plates - plenty for a family dinner.
Ingredients
- 300 g (10.58 oz) vine ripened tomatoes
- 1 red onion diced
- 1 yellow pepper deseeded and diced
- 2 tbsp olive oil
- 1 pinch salt and black pepper
- 150 g (5.29 oz) couscous
- 1 vegetable stock (bouillon) cube reduced salt variety
- 500 g (1.1 lb) Princes Mackerel Fillets in a Moroccan Style Sauce with Apricot Purée (4 cans)

Instructions
Preheat the oven to 240C/460F (220C fan). Place the tomatoes to one side of an oven tray and the chopped red onion and yellow pepper to the other side of the tray.
Drizzle all over with olive oil and season with salt and pepper.
Pop in the oven for 10 minutes.
Meanwhile, put the couscous in a large heatproof bowl with the stock cube.
Cover with 200ml of boiling water, stir well, cover and leave to stand for 5 minutes.
Tip the cans of Princes Mackerel Fillets in a Moroccan Style Sauce with Apricot Purée onto a microwaveable plate and break into large pieces with a fork. Microwave for 30 seconds on High.
Once everything is ready, fluff up the couscous.
Tip all of the quick roasted veg except the tomatoes into the bowl.
Mix well.
Serve the couscous onto four plates.
Top with the Princes Mackerel Fillets in a Moroccan Style Sauce with Apricot Purée.
Serve the grilled tomatoes on the side.
