    Speedy pesto flatbread pizza recipe

    This speedy pesto flatbread pizza recipe combines homemade pesto with piquant sun dried tomatoes and creamy goat's cheese for a truly decadent treat.

    It's inspired by a pizza I had while travelling. It’s so yummy, vegetarian and takes 10 minutes including prep and cooking time.

    Here's what to do to make this pesto flatbread pizza recipe.

    Ingredients

    For the pesto

    • 20 g (0.7 oz) pine nuts
    • 30 g (1.1 oz) fresh basil
    • 15 g (0.5 oz) Parmesan or vegetarian hard cheese alternative
    • 40 ml (1.4 floz) olive oil
    • 1 cloves (1) garlic minced
    • 1 pinch salt and black pepper

    To finish

    • 2 flat breads
    • 75 g (2.6 oz) sundried tomatoes drained and roughly chopped
    • 15 g (0.5 oz) pine nuts
    • 40 g (1.4 oz) goat’s cheese (vegetarian if required) crumbled
    • 1 pinch freshly ground black pepper
    • 1 drizzle olive oil

    Make the pesto

    Preheat the oven to 200C/390F (180C/355F fan). Put the pine nuts, basil, hard cheese and olive oil in a food processor.

    Blitz then season to taste.

    Spread the pesto all over both flatbreads.

    Sprinkle the sundried tomatoes, pine nuts and goat’s cheese over the flatbread. Place the flatbread onto a baking sheet and cook for just 2-3 minutes until warmed through.

    Slice and serve accompanied by plenty of salad.

      I have only started eating goats cheese recently and I can't get enough of it. I'm also a huge fan of pest so this recipe has my name written all over it yum. Plus it doesn't seem too difficult to make. What a great treat for having friends round in the coming weeks
