    This steel cut oats granola recipe with toasted pecans, walnuts and pumpkin seeds is crunchy, sweet and incredibly satisfying.

    You might think that steel cut oats (also known as pinhead oats) are too tough to use in granola, since they take a lot longer to make porridge with, but not at all!

    In fact, steel cut oats, once toasted, are beautifully crunchy and nutty, so they're perfect to use in this steel cut oats granola recipe.

    To make this recipe, all you'll need to do is warm honey and a splash of oil together in the microwave, then stir in the steel cut oats, pecans, walnuts and pumpkin seeds.

    You'll then tip the mixture into a lined tray and bake for half an hour, stirring every now and then to ensure the oats turn gorgeously golden all over.

    Once baked and cooled, you'll simply break your freshly made steel cut granola into clusters and it's ready to enjoy! It honestly couldn't be simpler.

    A note if you're in the UK, you may have gotten used to seeing steel cut / pinhead oats on the supermarket shelves but sadly they seem to have disappeared lately, with only the ground/rolled versions available.

    The good news is that pinhead oats are still available from many health food shops in the UK, as well as from flour retailers (such as Shipton Mill). And, of course, you can always pick them up online - I used Flahavans Pinhead Oatmeal from Amazon in this recipe.

    Here's the full recipe for my steel cut oats granola recipe, complete with plenty of step-by-step photographs to help you along the way.

    Ingredients

    • 3 tbsp vegetable oil canola oil, plus a little to oil the tray
    • 170 g (6 oz) runny honey
    • 500 g (1.1 lb) steel cut oats gluten free if required
    • 50 g (1.8 oz) pecans roughly chopped
    • 50 g (1.8 oz) walnuts roughly chopped
    • 50 g (1.8 oz) pumpkin seeds

    Equipment

    • Weighing scales
    • Measuring spoons
    • Kitchen knife
    • Chopping board
    • Large mixing bowl
    • Wooden spoon
    • Large roasting tray
    • Baking paper

    Instructions

    Line a large tray with baking paper. 

    Preheat the oven to 180C (160C fan).

    Put the oil and honey in a large, microwave-safe bowl. Microwave for 1 minute.

    Add the steel cut oats, pecans, walnuts and pumpkin seeds.

    Mix together.

    Tip the mixture into the prepared tray and level off.

    Bake for 30 minutes, stirring every 10 minutes until lightly browned.

    Remove from the oven and leave to cool completely without stirring further.

    Break into small pieces and transfer to a sealed container until ready to enjoy.
