I love winter. Sure, it's cold, but it's also cosy, and while there mightn't be much sunshine, that's the perfect excuse to stay inside and whip up this velvety, rich Baileys hot chocolate recipe.

Of course, it's a pretty delicious option to just make up some instant hot chocolate for a tub and add a glug of Baileys, but for a really decadent, impossibly smooth and rich treat, it's worth getting out the saucepan and doing things properly.
Don't worry, the whole recipe will only take about 10 minutes from start to finish, and it's worth the effort. Plus this ingredients are nice and simple: cocoa, brown sugar, milk, dark chocolate, Baileys and some optional squirty cream to top it all off.
Here's the full recipe. Trust me, this really is the ultimate Baileys hot chocolate.
Ingredients
- 4 tbsp cocoa powder (dutch processed)
- 6 tbsp soft light brown sugar
- 750 ml (1.6 pint) whole milk
- 250 ml (8.5 floz) Baileys
- 100 g (3.5 oz) dark chocolate roughly chopped (plus a little to serve)
- Squirty cream
Instructions
Put the milk, Baileys, dark chocolate into a large saucepan.

Heat gently over a low-medium heat, stirring regularly. You don't want the milk to boil.
Meanwhile, put the cocoa and sugar in a small bowl and add a spoonful of milk from the pan.

Mix to a smooth paste.

Add the paste to the pan and continue to heat gently until it is piping hot, rich and velvety.

Pour the Baileys hot chocolate into four mugs.

Top each mug with squirty cream and dark chocolate shavings, if you like.
