    Air Fryer Cod Goujons

    A quick, easy and delicious family favourite, my air fryer cod goujons are made from scratch with just cod, flour, eggs, breadcrumbs and a sprinkle of spices.

    You can cook store bought fish fingers in the air fryer, of course, but these freshly made ones only take a tiny bit more effort and the pay off is fresh, great-tasting, whole pieces of fish with no added colouring or preservatives. Win.

    To give you a sense of what's involved, you'll grab some cod fillets and slice them into fingers. Then you'll set up a 'crumbing station', which is really just three bowls - one containing flour, one containing egg and one containing breadcrumbs - and add a little spice.

    You'll then dip each piece of fish in the flour, then the egg, then the breadcrumbs and they're ready to cook in the air fryer!

    They take about 12-14 minutes to cook, which isn't that different from frozen store bought, so you see what I mean when I say you get the benefits of from scratch cooking for only a small amount of time and effort!

    You can serve your air fried cod goujons straight from basket to plate. In our house, we like to eat them with skin on fries, fresh peas and a little ketchup or tartar sauce on the side.

    Ingredients

    • 240 g (8.5 oz) skinless cod fillets
    • 50 g (1.8 oz) plain white flour all purpose flour
    • 1 medium free range eggs lightly beaten
    • 50 g (1.8 oz) dried breadcrumbs
    • ½ tsp (0.5 tsp) salt
    • ½ tsp (0.5 tsp) black pepper
    • ½ tbsp (0.5 tbsp) garlic granules
    • ½ tbsp (0.5 tbsp) ground cumin
    • 2 tsp ground turmeric
    • ½ tbsp (0.5 tbsp) ground coriander
    • 2 tbsp olive oil spray or use a brush

    Equipment

    • Weighing scales
    • Measuring spoons
    • Kitchen knife
    • Chopping board
    • 3 Small bowls
    • Air fryer

    Instructions

    Lightly oil the grill tray in your air fryer basket.

    Slice the cod into even lengths, about 2.5cm (1in) wide.

    Set up 3 bowls: the first containing the flour, the second the egg and the third the breadcrumbs.

    In a small dish, mix the pepper, garlic granules and spices together, then stir half into the flour and half into the breadcrumbs.

    Dip a fish piece into the flour to lightly cover on all sides. Shake off the excess, then dip into the egg to coat all over.

    Finally, dip the piece of fish into the breadcrumbs, making sure to completely cover.

    Repeat with every piece of fish, placing in your air fryer basket on the grill tray as you go.

    Spray or brush all over with oil.

    Set the air fryer to 160C (320F). Bake for 14 minutes until just golden (break one open to check the fish is cooked through).
